Fried Shrimp | How to Fry Shrimp

Hello all!
     Fried Shrimp I feel is always a classic and very delicious Shrimp in general can be made so many different ways as well.  Frying it however is a lot easier than you would imagine.  We feel people may not know how to or think it's to difficult with the oil but check out this post below and we bet if you bring this to your next party it will be a hit!

The other thing is if you are worried about frying don't be!  Use good fresh oil and a deep pan.  Have a thermometer with you and don't let the oil get above 350.  Remember when frying foods will cool the oil down so watch for that too.  You don't want to cool or to hot of oil.  However the Copper pan Chef got and uses came with a fryer basket!  It works so well and he continues to fry with it!  These shrimp cooked so fast Chef says he can't make them fast enough before people eat them! Check out the information below for this recipe!

Serves: 1 Bag will serve about 6-8 (Depending how many like shrimp!)
Prep Time: 25 Minutes
Cook Time: 2-4 Minutes
Total Time:  About 30 Minutes

Ingredients:
1 Bag Uncooked, Pealed, Deveined Shrimp
2-3 Cups Flour
3 Eggs
2 Tablespoons Milk
2-3 Cups Panko Break Crumbs
Pinch of Salt
Pinch of Pepper
Tablespoon Garlic Powder
Tablespoon Paprika
2 Tablespoons grated Parm Cheese
Oil
Lemons
Cocktail Sauce

Directions:
Pick up some uncooked, pealed and deveined shrimp from the store.
If frozen place the shrimp in cold water and let thaw.
While thawing, prep.
In 3 different pans place the following.
Pan 1:  Flour, pinch of salt, Pepper, Garlic Powder, Paprika. Then mix around
Pan 2: Eggs, Milk.  Then mix around
Pan 3: Panko crumbs, pinch of salt, Pepper, Parm Cheese.  Then mix around.
Drain the shrimp when thawed and pat dry.
Dredge the shrimp in the flour and get a good coat.  You can use the tail to hold, works great.
Move them to the egg batter and again use the tail as a holder to keep your hands clean.
Move them to the Panko mixture and fully coat.
Place on a plate and do this over and over with the other shrimp.
Place the plate in the fridge so the crumbs and adhere to the shrimp.
Heat your oil to 350 Degrees.
Using a basket or by hand slowly place the shrimp in the oil and monitor the heat.  You don't want it above 350 or below 300.
They will only take a few minutes to cook because they are not frozen.  If frozen keep them in longer.
Once they look golden brown remove and let dry on a cooling rack, but not long.
Serve up fast and hot with a lemon and cocktail sauce!

They came out with the perfect crunch and remember shrimp don't take long to cook so only about 2 or 3 minutes in the fryer.  The team made this video and it was our first attempt.  The shrimp came out really well and tasted great.  Chef was nervous because he wasn't sure how they would taste or look but he did very well.  Below will be our video so be sure to see how Chef puts this all together.

Tuna Zucchini Patties

Hello all!  Looking for a fun and different kind of Seafood dish?  This Tuna dish is very simple to make and has a great flavor to it.  Tuna can have a strong taste to it but this dish doesn't.  The Zucchini helps take on the flavor as well as gives this a very healthy.  The team will admit they are a bit tricky to make because tuna and zucchini doesn't hold well so forming the patties isn't easy chef said.  He advised it takes some time and to be careful.  However it really is a good dish.  We do hope if you enjoy Tuna you will enjoy this!  Check it out below...

Serves: 4-5
Prep Time: 15 Minutes
Cook Time: 5 Minutes


Ingredients:
1 Tablespoon Butter
1/2 Cup Finely Chopped Onion
1 pouch/Can Drained Tuna
1 Cup Italian Seasoned Bread crumbs, divided
1 Cup Shredded Zucchini
2 Large Eggs
1/3 Minced Fresh Parsley
1 Teaspoon Lemon Juice
Pinch of Salt and Pepper
2 tablespoons Canola Oil.
Lemon wedges for garnish

Directions:
In a large saucepan, heat butter over medium-high heat.  Add onion, cook and still until tender.
Remove from heat.
Add tuna, 1/2 breadcrumbs, Zucchini, Eggs, parsley, lemon juice, salt and pepper to the onion.
Mix lightly and thoroughly. 
Shape into small 1/2 patties.
Coat the patties in the remaining breadcrumbs.  If you run out of breadcrumbs feel free to add more.  Make sure the entire patty is coated.
In a large skillet  heat the oil over medium. 
Add Tuna patties and cook for about 3 to 4 minutes per side or until golden brown and headed all the way through.
Remove and garnish with parsley and lemon wedges.

We think you will will enjoy these crispy patties.  They have a nice flavor and a crunch that we really enjoyed.  We haven't cooked with Tuna yet but we wanted to and show something instead of Tuna Casserole.  The dish was interesting to make however Chef again said it was difficult to form the patties, he said they didn't hold that well but he used a patty former.  You can use these on beef or anything to form a good patty.  To see us make them check our the video below.

Oven Baked Haddock

Hello all!
     We wanted to give you our healthy version of a "Fish Fry".  This one however is oven baked!  Eating fish on Friday's is one many love to do however with this meal you can eat it anytime because this one is oven baked!  Same great taste and easy to make.  Fish also is so healthy, wild caught Haddock especially.  It is lean and filled with nutrients.

     We wanted to expand our seafood videos as well as show we do love healthy meals.  We think you really will enjoy this one!

Serves: 1-2
Prep Time: 10 Minutes
Cook Time: 20 Minutes
Total Time: 30 Minutes

Ingredients:
Fresh Haddock (1 filet per person)
1 Cup Flour
1 Cup Italian Bread Crumbs
4-5 Eggs
1 1/2 Ounces Milk
1 Table Spoon Smoked Paprika
1 Table Spoon Onion Powder
1 Table Spoon Garlic Powder
1 Table Spoon Italian Seasoning
Salt and Pepper
1 Lemon
Tarter Sauce

Directions:
Take out your piece of fresh Haddock lightly salt each side.
Setup your 3 stations.
Flour in the first
Egg and milk in the other
Italian Seasonings in the last.
Season the bread crumbs with the Paprika, Onion powder, garlic powder and Italian seasoning.
Dredge the fish through the flour and get a good coat.
Dip it in the egg wash and coat each side.
Move it to the bread crumbs making sure each side was coated.
Let the fish sit for about 5 minutes to let the bread crumbs settle on the fish.
Place in the oven at 375 Degrees for about 20 Minutes, checking every so often.
Cut up a lemon.
Once cooked remove and plate up with some tater sauce.


As you can see it really has a great look to it.

Crab Dip

     Hello all!
Chef wanted to share this special appetizer with everyone! Crab dip is found in many different books as well as online.  Chef took a few ideas and made his own!  This dip doesn't take long to make and can be served with many options from cold to toasted and on may different style breads or chips.  We think you will enjoy this one because how often does anyone bring a good crab dip to the party?  With spring just a around the corner this will be a great outside food snack as well!  So don't bring the same old chips and dip when you can bring Chef's Crab Dip!


Prep Time: 15 Minutes
Cook Time: 5 Minutes
Total Time: 20 Minutes


Ingredients: 
1 Package of intimation crab.
1 Package of Cream Cheese 8 oz
1 Tablespoon Sour Cream
1 Pinch of Garlic Salt
3-4 Table Spoons Chopped Green Onions
1 Stack of small Wantons
1 Loaf of Garlic Tuscan Bread (or another you prefer)
2 Table Spoons of Dill Weed
1/4 Cup Melted Butter


Directions:
In a small bowl take your melted butter and add 1 table spoon of dill weed, mix. Place aside
In a larger bowl mix the soften cream cheese
Add sour cream
Add Garlic Salt
Add Chopped Onions
Add 1 table spoon dill weed
Add Crab and mix together well and place aside.

Take your wantons and cut them in quarters or halves and place them on a sprayed cooking sheet.
Set your oven to broil and place the pan in the oven.
Cook for about 5 minutes but check often.
Once cooked take out and place in a large bowl, drizzle the butter dill glaze over and mix.
Place the Crab dip in serving bowl and plate up wantons.
Cut up the other bread you are using and toast.
Serve all together!

Crab Salad Sandwich

Hello all,
     Welcome back to another great post!  We have a simple one here today!  A very easy and quick lunch you can pull together with just a few ingredients, most you probably already have!  Everyone who likes crab usually likes Crab Salad.  Chef told us long ago when he was a kid he would go to the grocery store and his Mom for a treat would have them package some Crab Salad up.  He would go home and eat it as is or make a sandwich out of it.  So today he wanted to share this very cheap and easy recipe with you!


Prep Time:  5 Minutes
Cook Time:  0 Minutes
Total Time: 5 Minutes

Serves 4

Ingredients:
1 Package of intimation crab meat
4 Croissant Rolls
1 Table spoon chopped Onions
1/4 Cup chopped Celery
2 Table Spoons of shredded Cheddar Cheese
1/2 Cup Mayonnaise
1 Teaspoon Mustard
Pinch of Dill Weed
Pinch of Salt
Pinch of Pepper
4 Lettuce leaves

Directions:
Place the crab mean in a large bowl, make sure it is cut or shredded.
Add onions, and celery
Mix together
Add mustard, mayo,
Add a pinch of Salt and Pepper
Add a pinch of Dill Weed
Mix well but gently.
Cut a fresh croissant and place a leaf of lettuce down.
Spoon out the crab salad onto the lettuce leaf
Serve with a side of your choice!

     We really think you will enjoy this meal because it is so easy to make and again, most of the ingredients you have in your kitchen!  This meal is also Gluten free and doesn't contain most items that cause allergies, however always check the labels of all your ingredients to see where they are made and what is in them!  One of the reasons we do like this meal is because it really isn't complex and it also is a great started for a young person to make!  If you kids want to start cooking something like this would be a great start!  Chef served this up with some chips and some apple slices.  A meal like this can cost quit a bit actually if you go out but you can make all this for much less and get 4 sandwiches out of it!

100,000 SUBSCRIBER BONANZA!!!!|Honey Pecan Salmon

Hello all!

100,000 SUBSCRIBERS!
Kinda, it's actually 100...

     As you can see we hit a landmark!  Well we actually hit 100 SUBSCRIBERS, so whats a few zeros and a comma!  So we did it, one of the biggest milestones for You Tubers is actually the 100 Subscriber point.  They say it is one of the hardest per you are just starting off and getting there is difficult.  We wanted to celebrate this with a nice healthy dish we think you will really enjoy!  If you like fish/seafood you will enjoy this!  If you are just starting to try fish, this dish will not be a bad one to try.  Salmon is very healthy and easy to make.  With just a few ingredients and your oven you can put this amazing dish together in just a few minutes!

     We really think you will enjoy this dish and we hope you do try it.  The Cooking Corner loves making great fun dishes, but also wants our viewers to know fun and great tasting can also be healthy and beneficial to you! Below are all the ingredients and directions be sure to check them out and see our video below!  If we are ever going to hit 1,000 subscribers we will need your help so subscribe please!

Serves 2

Prep Time: 5 Minutes
Cook Time: 15-20 Minutes
Total Time: 25-30 Minutes

Ingredients:
2 Fresh caught salmon.  Also note you can use farm raised salmon if there is no fresh caught available.  Look for the darkest salmon, the darker the color the better.
1 Cub of pure farm bough Honey
2 Table spoons of crushed Pecans
1 Table Spoon Brown Sugar
4 Cups Broccoli cut up
2 Ounces of Olive Oil
2 Table spoons of of Salt
2 Table spoons of Pepper
2 Table spoons of Powder
2 Cups of Quinoa


Directions:
Rinse the salmon under cold water and pat dry.
Lightly season with salt, pepper and garlic powder, on both sides then let rest.
In a large bowl mix the broccoli, table spoon of salt, pepper and garlic powder.
In a smaller bowl mix the brown sugar, honey and chopped pecans.  Chop the pecans in a mixer if you can't buy them chopped up.  Chef chopped his own.
Add more honey if needed and mix up till it is a thick glaze.
Either heat up a cast iron skillet or place tin foil on a cooking sheet if you do not have cast iron.
(Heating up the cast iron will allow the fish to cook and not stick)
Place your fish in the skillet or sheet pan and surround with the seasoned broccoli
Glace the salmon with your honey pecan glaze, place a nice thick coat on.
Have your oven set to broil and place in.
Depending on how how your oven gets you need between 15-20 minutes.  Do not have the fish to close to the top, second setting down is good.
Cook the Quinoa.
Check the fish every few minutes, if the boccie is getting crispy as well as the fish you are good.
You want the fish to look crispy and the broccoli to have black charred tops.
Remove and plate up.
Drizzle any reaming glaze over top and serve over a bead of Quinoa or not up to you.




     There you have it! Looks amazing and has a great sweet taste, the broccoli will cook with that glaze as well making them crispy and sweet!  This dish is different unique and very healthy, one of Chef's very own original.

Parmesan Crusted Alaskan Cod (Breaking Ground Video)

This is my Breaking Ground video!  We are still set to open Fall 2016, 2 weeks to go!
     
     This is my first installment of my 30 Minute Meals Section!  I wanted to start a section that is great for people on the go, it might be a long day at work, sports, the gym, a second job, kids, whatever!  I know your busy!  So like many others I wanted to show you some great quick but very delicious meals you can prepare and not be up all night cooking or cleaning!

     I can't wait to expand this section and I have many different meals.  I think easy, fun and tasteful meals are so important during that really busy time of the week.  I love taking my time and making a long meal on the weekend or when I have the time, however during the week when things are busy I need a quick meal.
   
     This meal came out great, the fish had a lot of flavor, was very tender and I felt full but not stuffed or sick after.  Fish is such a healthy meal to cook.  Then on top of that serve it over fresh vegetables or a green salad for an even healthier option.  The below recipe makes about two meals but you can just add more fish, the mayonnaise mix will have enough for a few to coat if you need it.  You can also double the recipe if you need more.

Prep Time:  7 Minutes
Cook Time: 5-8 Minutes
Total Time: 12-15 Minutes

Ingredients:
1/2 cup Panko breadcrumbs
2 Tablespoons of Mayonnaise 
1 tsp Tablespoon Garlic Powder
1 tsp Onion Powder
1 tsp chili powder
1 tsp paprika 
1 4-6 ounce  skinless Pacific Cod, Fresh or Frozen
Pinch of salt
Pinch of pepper
Shreaded Parmesan Cheese
Grated Parmesan Cheese
Fresh Spring Greens
Italian Parmesan dressing (or a dressing you prefer)

Directions:
Preheat your oven to Broil
Rinse both sides of the Cod with cold water and pat dry.
Season both sides with salt and pepper.
In a bowl mix mayonnaise, garlic, onion powder, chili powder, and paprika.
Brush one side of the Cod with mayonnaise mix 
In a deep dish mix the Panko bread crumbs and shredded Parmesan cheese together. 
Place that side that is brushed with the bonding agent down and press lightly on the fish. 
Brush the other side with your bonding mix.
Flip the Cod over and bread the other side. 
Put some olive oil or cooking spray on a cooking tray.  (I didn't do on the video and forgot!)
Place the Cod on a sheet and place in the oven.
Cook until golden brown, about 5-7 minutes, watch it carefully!
Mix up the green spring mix with some Italian Parmesan dressings and Plate.
Take the cod out and gently place on the spring mix.
You can garnish with a lemon wedge if you wish.
-Serve immediately fish cools fast!
