Grilled French Fries

 Hey everyone!

     We have a fun side for you!  Now a lot of people know about French Fries.  They know they are mainly fried in oil or oven backed.  However today we are going to grill them!  Nice large seasoned fries!  Chef said he hasn't even tried them yet so he is so excited!  This makes for a great new taste on fries along with some cool grill marks.  This is also nice if you are grilling burgers or hot dogs you can grill everything at once and not worry about running to the fryer!  Check this video out below and yes this one is also Gluten Free.  Just always of course check the seasonings. 


Prep Time: 10 Minutes
Cook Time:15 Minutes
Total Time: 25 Minutes

Serves: 6-8 


Ingredients: Potatoes (We used Russetts) Melted Butter 1 Tbsp Ground Bay leaves 1 1/2 Tsp dry mustard 1 Tsp Ground Ginger 1/2 Tsp Allspice 1 Tsp Chilipowder 1 Tsp Paprika 1/2 Tsp Cinnamon 1 Tsp Garlic Powder Pinch of Salt and Pepper

Directions: Wash the potatoes and dry. Cut them into wedges. Place them in a steamer pot. (Or boiling water if you don't have a steamer pot) Steam them for just a few minutes. While they are steaming in a large bowl mix all the seasonings together. (Feel free to use others you like as well!) Mix well and put aside. Once the potato's are soft but not to soft remove them and pat them dry. Brush the fries wit either melted butter or oil to glaze them. Sprinkle the rub you made over the fries and flip and get the other side. Place them on your hot grill spaced apart evenly. Let cook for several minutes and flip. Grill other side for several minutes and remove.

Here they are!


They came out really good! A nice char and crispy outside with a tender almost mashed like potato inside! We were very happy with the outcome and it was nice not to use oil. You can mix up the seasonings however you feel but do give this a try. Check out our video below to see how we did this!

Crispy Potato Stacks

Hey all!
Today we have a great fall side dish!  Crispy Potato Stacks.  We found this from Byron Talbot who we follow on YouTube.  We really enjoy his videos and dishes he makes.  Chef wanted to make this video for a while now and finally did it.  He has to admit it was so simple too!  It is one of those ideas that looks so complex but is not at all.  We do hope you check out the blog post to see the full recipe and check out Bryon as well!  This side dish is Gluten Free too.


Prep Time: 5 Minutes
Cook Time: 10 Minutes
Total Time: 10 Minutes
Serves: 4-6

Ingredients:
Russet Potatoes
Salt
Frying Oil

Directions:
Pour your cooking oil in a pan and heat up to 350 degrees.
Set your mandolin to a very fine or thin setting.  If you don't own one you can use a knife. Be careful with either one.
Slide the potato making slices and keep going until you are almost all the way through.  No ER Visits please!
Then throw out the top and bottom few slices.  You really only need the middle.  Put the stacks back together making it look like the potato again.
Cut the all four sides of the potato removing the skin and squaring off the potato.
Cut it down the middle and place aside.
Do not place in water.  Water will wash the starch off and then they will fall apart in the oil.
Slowly place the squares in the oil slowly and let cook.  Move them around a bit so they don't stick and monitor.
After about 5 minutes check and remove if golden brown. 
Then season with salt and plate up with ketchup.

Here they are!


They came out really well we will add.  Chef was nervous at first but they did hold and tasted so good.  The crunch outside and soft inside.  They also looked really fun and different.  These would go good with a steak or other disk like that.  Check out the video of Chef making this below to see how easy it was!


As you can see it really was simple.  Chef has wanted to try this since he saw it on Byron's channel.  He was nervous at first but then after trying it found they wee so simple to make!  He said he will make these again for sure.  A special shout out to Bryon Talbot for this creative idea!  His links are below so be sure to check those out!  The other cool thing is you can even make these as an appetizer!  We just listed them as sides.  The past few videos we have made have only had a few key ingredients and by far they have been so fun to make!  We can't wait for our next one.  Fall time is one of our favorites!  We hope you are all having a fun and spooky October!

Sweet Potato Fries

Hello all!
We wanted to share with you our fun take on Sweet Potato Fries!  Now there are a lot of ways to make this and many of them are oven baked.  However we wanted to show you the fired take!  Sweet potato fries are healthy and have a great taste.  Even if you fry them the sweet potato has so many vitamins and minerals.  This side dish also is so simple to make, especially if you have a fry cutter.  Something we suggest you invest in.  They aren't expensive and really come in handy.  They came out crunchy on the outside and tender on the inside.  They are also Gluten Free!  Check out this post and see how simple it is to make the classic Sweet Potato Fry!   

Prep Time: 1 Hour (Mos of this is per soaking in water to remove starch)
Cook Time: 15 Minutes
Total Time: 1 Hour 15 Minutes

Serves: 6-8 Depending how many potatoes you use

Ingredients: Sweet Potatoes Canola Oil Honey

Directions:
Peal and cut the sweet potatoes
Use a fry cutter or knife to make the fries of you size
Place them in water up to an hour
Take out and fully dry
Heat up oil to 280-300 Degrees
Place fries in and let cook for 3-4 Minutes to Blanch the fries
Take out and heat oil up to 350 degrees and now cook them between 5-8 minutes.
Remove and plate up!

Here they are!


They really came out great and had that amazing crunch to them.  Sweet potato fries also don't need salt like normal fries because of there sweet taste making them a bit more healthy in that aspect.  However we still love normal fries too!  The honey is such a great dipping sauce as well.  Try to pick up some pure farmers made honey if you can!  Down below is our video on how we put this all together so be sure to check that out too!

Parmesan Brussels Sprouts

Hello all!

So Brussels Sprouts get a bad name. We feel people are afraid of them because they were cooked incorrectly or just had a bad experience.  However if cooked in certain ways they can taste amazing.  Usually grilling or in the oven can crisp them up nicely!  These came out great and kid approved because Chef's daughter had a few!  Please do check them out and see all the great info below!

Prep Time: 5 Minutes
Cook Time: 25 Minutes
Total Time: 30 Minutes

Ingredients: 1/2 Pound Fresh Brussels Sprouts (Small Bag) 1 1/2 teaspoons Olive Oil 1 1/2 teaspoons Lemon Juice Pinch of Salt, Pepper and Garlic Powder 1 Tablespoon Shredded Parmesan Cheese

Directions:
Wash and dry the Brussels Sprouts.
Make a small X in the bottom of them with a sharp knife.
Place the sprouts in a large bowl and drizzled the olive oil, lemon juice and sprinkle with the garlic powder.
Toss and place in the oven 400 Degrees for about 25 Minutes.
Take out and plate up.
Sprinkle Parm Cheese over top.
Serve up!

Zucchini Fries

Hey all!
How about some Fries!  Health ones that is, what a great way to create something new and different!  Everyone loves french fries but try a healthy baked take on them with Zucchini Fries!  They have so many qualities to them and have that nice crunch everyone loves.  They also are so simple to make and only use a few ingredients.  Check them out below and give this fun dish a try!  We think you will really enjoy them!

Serves: 2
Prep Time: 5 Minutes
Cook Time: 25 Minutes
Total Time: 30 Minutes

Ingredients: 2 Zucchini's 2 Eggs 1 Table Spoon Milk 1/4 Cup Flour 3 Table Spoons Corn Meal 1/2 Teaspoon Garlic Powder 1/2 Teaspoon Chili Powder 1/2 Teaspoon Paprika Pinch of Salt & Pepper

Directions:
Cut Zucchini in to small strips the size of french fries. Or use a french fry cutter.
In a small bowl whisk eggs and Milk.
In a different bowl combine the flour, cornmeal and seasonings.
Dip the Zucchini in the egg wash then roll lightly in the flour mix.
Place them on a baking sheet coated with cooking spray and bake at 425.
Cook from 18-25 minutes or until golden brown. Turn them once if needed.
Serve up with Marinara Sauce!

Zesty Zoodle Salad

Hello All!

Fall is here!  How exciting, we made it!  This is Chef's favorite times of year.  He loves fall and fall cooking!  We wanted to start off with a fun and healthy dish!  This salad is not only very simple to make but very tasty as well.  You can make this any time of year and we suggest to make sure you purchase a Veggitti.  They are so simple to use and cheap to purchase!

Prep Time: 10 Minutes
Cook Time: 0.0 Minutes
Total Time: 10 Minutes



Ingredients: 2 Zucchini 2 Table Spoons of Basting or Seasoned Oil 1/2 Cup Cherry Tomatoes, drizzled in seasoned oil. 1/2 Cup Small Mozzarella Balls, drizzled in season oil. 2 Table spoons Balsamic Vinegar. Salt and Pepper

Directions:
Take a few Zucchini's and use them on the Veggitti to spiral them out.
Place them in a large bowl and add basting or seasoned oil.
Add Salt and Pepper
Toss and Mix.
On a side plate cut some small cherry tomatoes and Mozzarella into pieces.
They can have oil on them too.
Mix with the salad and toss again.
Drizzle the Balsamic Vinegar and toss one more time.
Serve up!

Butternut Squash and Carrots

Hello everyone!

     We wanted to put a fun and healthy dish out to celebrate the fall season!  This dish is so simple to make and packed with good foods for you!  Sometimes sides are hard to find or at least new ones at least.  So try out this very festive veggie side you and your family will love!  Butternut Squash and Carrots are packed with vitamins and minerals your body needs to stay healthy.  With some honey and oven time you will have such a delicious and nutritious side!

    Not only is this dish healthy and easy to make, it is Gluten Free as well!

Serves: 4-6

Prep Time: 5 Minutes
Cook Time: 25 Minutes
Total Time: 30 Minutes

Ingredients:
1 Lb Butternut Squash
1 Package of Baby Carrots 3 Tablespoons seasoned Oil, basting oil. You can buy at store. Pure Honey Brown Sugar Salt Pepper
Directions:
Cut up your butternut squash into about 1 in pieces.
Place them in a large bowl and add the carrots.
Add the oil and mix together.
Season with Salt and Pepper
Heat your oven to 400 Degrees.
Place them on parchment paper on a cooking sheet in the oven.
Cook for 20 Minutes then take out.
Glaze with a bit of honey and raise to oven to Broil.
Cook for 5 more minutes.
Take out and place in a bowl. 
Sprinkle some brown sugar over top and serve.


Here is the end result!

Green Beans Almondine

Hey All!  You need to eat more beans!?  Of course you do!

    This amazing side dish can almost be a meal.  One dish everyone will ask for seconds on.  Beans are so healthy for the body and mixed with almonds they are even better!  In this day and age however it is hard to get kids to eat their beans.  One of the reasons so many people love this dish is because of how great it taste and how easy it is to make!

     You can pair this as a side to chicken, beef, seafood, pasta or pretty much anything!  If you want a light meal you can make this alone too.  The meal is filling and french cut green beans are light and easy to digest.  Check out how simple this is below and you will be amazed how the kids ask for seconds!

Prep Time: 5 Minutes
Cook Time: 15 Minutes
Total Time: 20 Minutes

Ingredients:
1 Bag of French Cut Beans.  Use Fresh or Frozen, not canned.
3 Table spoons of Sliced Almonds
3 Table spoons of Butter
1 Cup of Water
Pinch of Salt and Pepper

Directions:
Place 1 bag of french cut style green beans in a pot of boiling water.
On a separate pan heat up butter.  (Or oil to make it vegan)
Once the butter is melted down, add in the sliced Almonds.
Stir around till browned.
Drain Green beans.
Add the green Beans to the butter/almonds.
Mix around.
Place in a nice bowl and serve!

You can garnish with some uncooked chopped almonds.


We have to say, they really have a beautiful look to them.

Garlic Zucchini Pasta

Hello all!

     Looking for an amazing and easy side dish?  This Garlic Zucchini dish will make eating your veggies so easy and fun!  For a long time there have been unique ways to get people to eat their vegetables but with using a pretty cool tool you can have a fun pasta style that will go so well with a nice garlic sauce we will show you!  This is also Gluten Free and Vegetarian approved!

Serves: 4

Prep Time: 5 Minutes
Cook Time: 10 Minutes
Total Time:  15 Minutes

Ingredients:
3 Zucchini's
3 Tablespoons Olive Oil
2-3 Tablespoons Butter
2 Tablespoons Chopped Garlic
2 Tablespoons Chopped Basil

Directions:
Clean the Zucchini's and then dry.
Cut each end off and place them in the Veggitti Pro.
Set the cutter to the thickness you would like.
Place a bowl on the outside to catch the pasta as it comes out.
Turn the knob and push as it moves it along!
In a pan heat up a tablespoon of olive oil.
Place the now veggie pasta in and pan fry for a few minutes on med-high heat.
You don't want to cook them to long or they will get mushy.  Keep the pasta crunchy.
Remove and place aside.
Heat up about 2-3 Table spoons of oil and 2-3 table spoons of butter.
Add in Garlic and Basil.
Cook for about 3 minutes.
Drizzle over the veggie pasta and mix up.
Place in a bowl and serve with your main meal or just eat this alone!

Here it is!

     It has a great finish and the garlic is just amazing with it.  You can really eat this alone if you are looking for a healthy dish to fill your appetite.  This side really doesn't take long and we think you and your family will enjoy it!  You can also add different flavors besides garlic so try other ideas!  Below is our video on this so be sure to check it out.  We think you really will enjoy this!

Baked Dolloped Sweet Potatoes

Hello all!

     We hope this finds you well!  Today we wanted to share a sweet but healthy dish!  This side dish is so easy to make and has a great healthy aspect to it!  Baked Sweet Potatoes, with a nice sweet dollop on top.  Sweet potatoes are generally so full of flavor but if you just add a touch of flavor to the top you can make them look really nice and add a kick of flavor in case you don't exactly love them.

     One of the reasons we love Sweet Potatoes so much is because they are a natural product of our planet, packed with vitamins and minerals, and digest in our system very easily.   Now the big question is, Yams vs Sweet Potatoes!  Well you can read on the difference till you are blue in the face however they both carry different unique differences.  They both have very healthy facts about them and being able to tell isn't to hard.  However this post isn't to just educate you on the difference.  If you wanted a post on that let me know!

     I can advise we eat more sweet potatoes here however yams are very healthy for you as well.  The Sweet Potato does have a deeper orange color and your local vendor should have them marked correctly.  However you should also be able to tell with the taste if you eat one over the other.


Prep Time: 5 Minutes
Cook Time: 1 hr or more (depending on potato size)
Total Time 1 hour 30 Minutes for us.


Ingredients:
4 Sweet Potatoes
3 Ounces of cream cheese (softened)
1 Tablespoon butter (softened)
2 Tablespoons brown sugar
1 Pinch of cinnamon

Directions:
Wash, scrub and then dry your sweet potatoes.
With a fork or knife poke hols in the potatoes.
Set your oven to 375 degrees Fahrenheit.
Place the potatoes on a sheet pan and cook.
Let cook between 1 hour up to 1 hour 25 minutes.  Pending on the size.
While cooking, make the topping.
In a medium bowl, place the cream cheese, butter, brown sugar and cinnamon.
With a fork mix well then use a whisk if needed.  You want it to be creamy.
When the potatoes are done remove and test with a knife.  It should slide in easy and come out clean.
Use the knife to cut the middle and spread the sides apart.
Let cook a bit and use the fork to fluff the potato.
Place a dollop of the topping over the potato.
Repeat and then serve hot!

Broiled "Burned" Broccoli

     Hello all!  Looking for a great healthy side dish?

    Or want to expand your vegetable consumption!?  Need those kids to eat healthier?  Check out this great side dish!  It is kid approved!!!

     So everyone knows Broccoli is one of the most difficult vegetables to get your kids, and even some adults to eat.  However it is one of the best ones for you, there are so many good vitamins, minerals and other aspects the vegetable does.  This post would be to long, so in short it really is a super food!  Even Chef will be the first to admit he don't eat enough of them his wife will tell you this too.  He  knows the importance of vegetables and tries to cook them in a way he feels you will enjoy.  Below is a great idea chef  came across at a friends house and loved it ever since!  He even had had kids try and like it!

     So how does one put something like "broccoli" and "burned" together to make something good to eat!  Honestly we have no idea, maybe two negatives equal a positive?  We will admit it is odd but I never know till I tried this new side dish how much I would love it!  We think the crunch along with the seasonings cooked in with the oil just makes them easy and tasteful to eat.

     We actually broil it.  Yes we cook them at a high temperature with some seas onions and oil and give it a  good char.  The nice crunch and bit of char taste makes them easier I would say for me that is to eat and enjoy!  There are many ways to cook broccoli however this one always works for us and I hope you enjoy it to!

Prep Time: 5 Minutes
Cook Time: 20 Minutes
Total Time: 25 Minutes

Ingredients:  
1 Head of Broccoli
1.5 Ounces Olive Oil
1 Table Spoon Garlic Powder 
1 Table Spoon Salt
1 Table Spoon Pepper

Directions:
Set your oven to broil
Take your broccoli and trim them down cutting them to smaller pieces.
Place them in a large bowl.
Drizzle olive oil over them.  Just a bit you don't have to soak them!
Lightly season them with salt, pepper and anything else you would like.
Place on a cooking sheet.
Place in the oven and watch carefully for about 20-25 minutes.
When you take them out they will look burned, that is good!  They will have some crisp and texture to them.  You can also cook them shorter or longer.  This is all up to you.

Here is the end result.

    We also do other vegetables like cauliflower this way too.  We found it really works and even our chef loves them and will have seconds and thirds!  This side dish is also so easy and you can just have it cooking while your main dish is being worked or cooking too.  The dish won't take up to much of your time.  You can also prep the broccoli early in the day to so your are fully ready if you are having a party. Asparagus Parmesan

  
     Hello all!
     We wanted to share a very easy and great side for almost any main dish.  Asparagus has many health benefits such as it is high in many minerals and fiber.  Green vegetables are also very good for your immune system and help your liver and kidneys function.  They clean out major organs like this, aside from that funny smell everyone knows about the vegetable is also has a very good taste and you can make it all different kinds of ways.   You can also pick them up at your local store or market for a pretty cheap price.  I have even bought them frozen which is still good because picked fruits and vegetables are usually flash frozen so they retain the minerals and nutrients.

     So below is a great oven roasted side dish you can put with chicken, beef, fish or even alone if you wish for a healthy snack.  You can also place this on a salad to mix it up!

Serves 4-6 Depending on the bundle you get.

Prep Time: 5 Minutes
Cook Time: 20 Minutes
Total Time: 25 Minutes

Ingredients:
Asparagus: 1 bundle or package is about 4 servings
Cooking Oil-we use Coconut oil or Olive oil    
Parmesan cheese grated

Instructions: 
Heat your oven to 350
Rinse off the Asparagus and dry
Cut the bottoms off about .5 to 1 inch from the bottom
Lay the Asparagus flat on a tray like a cookie sheet, make sure it has a lip around
Drizzle olive oil on the Asparagus, just go back and fourth from top to bottom don't over drizzle.
Sprinkle the Parmesan cheese over the Asparagus.
Place the tray in the oven and cook for about 20 minutes you can go longer if you would like.  Test them my sicking a fork in the Asparagus and see how tough they are.
Take out and place on your dish and enjoy!




     We think you will enjoy this dish, it's really easy to make and is healthy too.  We like to have it when we eat chicken or fish.  Honestly it also makes a great side dish if you can't decide or if you are both saying no to a vegetable the other is offering.  



     With such an easy dish we think you will be making this more often then not!  The team likes this dish because it is healthy, taste great and goes with everything.  Also if you are just stumped on a side, cook this!  You just need 3 ingredients and it takes less than a half an hour.  Friends of our team say they use this as a go to now and it has helped them complete many meals!

Sauteed Apples

     With fall comes fall foods and snacks!  Everyone loves baked apples but how about Sauteed Apples.  This different style is easy to make and different then the classic baked apples.  Bring a new side to the table and keep your guest wondering where you got this dish!  (It was us)  We know you will enjoy this dish because apples taste great, make a healthy side and this is unique!  Please see below for our easy instructions, pic and video!  Make sure to watch it to see how easy this can be!

Ingredients:
4 Medium Apples.
2 Table Spoons Butter
Pinch of Cinnamon
Pinch of Salt
Pinch of Pepper

Directions:
Peel the apples and cut into wedges.  Use a apple corer to cut them with ease.  They are cheap and a great tool to have.
Place the slices in water to keep them from browing.
In a medium pan melt the butter.
Dry the apple slices and add them to the butter.  Make sure the apples are arranged on one side.
Let the apples cook for about 5-7 minutes.
Lightly season with the sugar and salt and let cook 2-3 minutes more.
Then season with Cinnamon.
Turn the apples over and turn the heat up to medium.
Cook and saute for 2-3 minutes.
Take off and plate.
Serve at once.

     This great fall side dish or snack will be perfect for you and the family!  The warm cooked apples have a crunch along with just that great taste.  Get some warm cloths on and get ready for the holiday season with this great side dish!

Loaded Baked Potato

     Everyone loves a good baked potato!  Taking the time to slowly cook them and then adding some of your favorite toppings makes such an amazing side dish or snack.  These are so easy to make and once done you and your guest will have this very flavorful side dish.

     What we like so much about this side dish is that it can go with just about anything.  You can add different things to it and it doesn't take long to prep and serve.  With just dressing up the potato after it's been cooked you are good to go!  Below are the steps to follow along with our video!  Please check it out.

Prep Time: 5 Minues
Cook Time: 1 hr 10 minutes
Total Time: 1.15 Hr

This recipe serves 2

Ingredients:
2 Potatoes (one per person) Russet or Idaho work great.
2 Table Spoon Butter
3 Table Spoon Parsley
3 Table Spoon Rosemary
3 Table Spoon Chives
1 Table spoon Green Onion
3 Table Spoon Olive Oil
3 Small pieces cooked crispy bacon
1/4 Cup Extra Sharp Cheddar Cheese (Buy a fresh block and shred it your self)
Pinch of Salt and Pepper
1-2 Table Spoons Sour Cream

Direction:
Wash and dry your potatoes
Using a fork or sharp knife poke a few holes around the potato
Finley chop up the parsley and rosemary
Drizzle some olive oil on the potato and then roll it in the oil
Sprinkle some salt and pepper over the potato, flip over and season again
Sprinkle the rosemary and parsley over the potato and roll it to have each side coated a bit
Place in your oven at 375 for 1 hr
As the potato is cooking dice up a green onion.
Take out and slice down the middle, but not all the way.
With a fork pry the potato open a bit or use your hands to push each side.  Be careful it will be hot!
Using your fork or knife, fluff up the potato insides.
Place two thin slices of butter in the potato.
Shred the extra sharp cheddar cheese over the potato, It will meld down so shred quit a bit.
Place back in the over between 4-6 minutes still at 375 degrees.
Take out again and place a few larger sized pieces of crispy cooked bacon inside. Or you can cumble it up.
Sprinkle the chopped up green onion on the sour cream.

Serve hot and enjoy!


     This side dish is again very easy to make and will taste so much more enjoyable than a potato you microwaved!  Since the potato takes an hour to cook you can still make your main dish.  Once done with some dressing up your potato is set!

     The picture below was one Chef made, it came out great however if you wanted to add more cheese or sour cream you can.  Some pictures you see the potato over flowing with toppings.  We feel this is done to often and can overpower the potato.  Chef however didn't want to to much flavor or take away the taste of the potato so we topped it off at an even level.  We really enjoyed this and was glad Chef let us all try this!

Homemade French Fries (Teaser Video)

  One of the best and classic sides, late night snack or just all around fun foods to eat is the classic french fry!  This amazing snack can be made simple or spiced up, however you make it everyone is sure to run over and be excited that you made them homemade fries!

     You don't have to go far to find french fries and for a long time I thought they were difficult to make but after some great pointers from a friend and wife we made them and did a video all in one take!  I think honestly cutting the fries scared me the most.  I always felt you have to buy a cutter to specifically make them but it really is easy.  With just a few natural ingredients and a some time you can have amazing and very crispy french fries your self!

     So below is just one style of how to cook them, I hope you enjoy and try this dish too!  Also note this is my YouTube channels teaser video!  After putting up my trailer so many people have been messaging me as well as asking in person when the first video was going to drop!  I know I said the Fall but people are just to excited to wait so I will be dropping this teaser video now!  I hope you enjoy!

Below is all the information be sure to view the video at the bottom and check out others to come!


Prep Time: 5-10 Minutes
Cook Time: 50-60 Minutes
Total Time: Little over an hr. (I do add shortcuts too)    

Ingredients: 
-Russet Potatoes about one large potato per person
-Salt
-Pepper
-Vegetable Oil

Directions:
-Wash and pat dry all the potatoes you want to use.  In my video I left the skins on to give them that home style look but you can peal them as well.  I used Russet potatoes I feel they work best.
- Cut the potato in half and then place the smooth side down and slice down making thin strips.
- Place the strips in cold water.  This will remove some of the starch to make them crispy when cooked.
- Let sit in the bowl of cold water for about 15 minutes.  You will see the water get cloudy.
- Take the fries out and pat dry.
- Heat your fryer up to about 310 degrees.  Use and outside fryer to keep the vapors outside!
- Place the fries in slowly and let cook for about 7 minutes.  The low heat will cook them from the inside.  The fries will cook the oil down to about 250-260 this is okay.
-Pull the fries out and let dry.  Place them out to cool for about 25-30 minutes or place in the freezer to speed up the cooling process.  If you place them in the freezer you only need about 10 minutes.
***Note after freezing them you can place them in a bag and cook them later!  You can cook up a large batch to do this and have fries on hand then.  All you have to do is pull them from the freezer and continue with the next few steps!
- Once the fries are cooled down raise the oil heat to about 390 degrees, again the oil will cool so just keep an eye on it and raise the heat if needed.
- Place the fries in and let fry in the hot oil now.  This will make them crispy and will only take a few minutes to cook.
- Let cook until you want.  We like our really crispy so we leave them in for a few minutes.
- Remove slowly and let the oil drain off them, Place in a bowl with a paper towel.
- Salt and Pepper to your liking and mix well.
- Place on a plate with your favorite dipping sauce and serve immediately.

     I hope you all enjoyed this dish, I never thought to double fry the fries but after doing a lot of looking and viewing I learned this helps make the fries that much better and crispy.  This dish really doesn't take much time and you can use the freezer to cook the fries after the first cooking stage to cool them down faster.
