Inside out Lasanga

Hey all! Fan of Lasagna? How about a fast, simple and amazing dinner! This dish was so simple to make and tasted amazing! This would be perfect for that fast, rush during the week when everyone is busy! We really enjoyed this meal not only because it was delicious but it was so simple to make! This really is a great fall dish you can put together in a pinch for the family! Chef also used some healthier ingredients in the mix to make things healthier. Make sure to check out how we put this all together!

Fun fact about Chef, he had never made the tradition Lasagna before! He admits to it too. He just laughs saying it feels it is something he never learned. However this is so different this dish allows you just have fun and mix the ingredients all around! No fumbling with the long pasta noodles or worrying about layering. This mixed up dish is a newer take on a classic meal. Check out how we put this together below we think you really will enjoy it.

Serves: 6-8
Prep Time: 15 Minutes
Cook Time: 15 Minutes
Total Time: 30 Minutes

Ingredients: 1 Pound Ground Beef 1/2 Sweet Onion, Chopped 1 Teaspoon Minced Garlic 2 Cups Spiral Macaroni 1 Cup Cottage Cheese 8 Ounces Red Sauce 1-2 Cups Shredded Mozzarella Cheese 1/2 Cup Shredded Parm Cheese, plus some for garnish Parsley for garnish Bread, for the side

Directions:
Preheat the oven to 350 degrees
In a medium pan, cook the ground beef. (Chef uses 90/10 fat ratio If you use something with more fat like 80/20 you won't need to heat a little oil. However chef used a touch of oil.
After several minutes add the chopped onion let cook
As the beef is almost brown and cooked add the garlic, finish cooking and turn the burner off.
Start your water and get your pasta almost cooked, you want the pasta al dente becuase the dish goes in the oven.
Now add the cortege cheese to the cooked beef and onions, mix well.
Add red sauce to the meat mixture and again stir
Add the pasta and stir well
Spray a baking pan with a non stick solution. You want an oven save dish like we used.
Put the mixture in the dish and spread out evenly.
Place the shredded mozzarella over top
Place the shredded Parm Cheese on top as well.
Sprinkle some Parsley then place in the oven.
Cook for about 15 minutes.
The cheese will have a nice melted top.
Dish up and serve with some buttered bread and more parm cheese on top.

Here it is!

This came out so well! It has a great look to it and is so delicious! It was very filling but doesn't make you feel like you ate something unhealthy. This again is such a great weekday meal if you need something for the family. Be sure to check out the video below to see how we put it together! Buffalo Chicken Enchiladas

Hey all!  Love Enchiladas?  How about trying a Buffalo Chicken one!  This dish is so full of flavor and is so simple to make!  We think you will love it!  Below are all the ingredients and feel free to adjust them.  This meal didn't take long at all to make either, yet another very simple one.  Chef's wife was pregnant at the time of this video so there are some tips and trips to it because you are working with Blue Cheese and have to be careful.

However this is one of our more favorite dishes because not only taste, but how simple it is!  This is one of the great 30 minute meals you can put together before the family is home!  Have it ready to serve as they arrive!  Chef has told us these are the kinds of dishes he loves most.  He knows how difficult it is to work and get things done when you arrive home.  We do hope you check out this dish below we think you really will enjoy it!

Serves: 5
Prep Time: 10 Minutes
Cook Time: 15-20 Minutes
Total Time: About 30 Minutes

Ingredients:
6 Table Spoons Melted Unsalted Butter, split into 3 tablespoons.
4 Cups of Shredded Rotisserie Chicken
8 Ounces Soften Cream Cheese
2 Cups Shredded Cheddar Cheese, Split in two.
1 Cup of Hot Sauce.  Split into 1/3 and 2/3.
Bundle of Scallions, cut into small pieces.  White parts and green.
1/4 Teaspoon Cumin
3 Tablespoons Water
Tortillas
Non Stick Cooking Spray
Crumbled Blue Cheese
Blue Cheese Dressing
Sour Cream

Directions:
Prep Oven to 400 Degrees
Take your precooked rotisserie chicken and pull it apart.  White meat only is fine.
Place the Shredded chicken in a large bowl.
Add softened cream cheese, 1 cup Shredded Cheese, 1/3 Hot sauce, Chopped white part of the scallions, 3 tablespoons melted butter, and the Cumin
Mix all the ingredients well.
Glaze:  In a small side bowl add 2/3 cup hot sauce, 3 tablespoons melted butter, and 3 tablespoons water.
Mix well.
Spray your oven save cooking dish with a non stick cooking spray.
Place a Tortilla down and put a little filling in the middle and roll up then fold ends up.
Place the rolled tortilla in the dish and continue on till the pan is full.
Drizzle the glaze mixture over all the rolled tortillas.
Sprinkle the rest of the shredded cheese on top.
Sprinkle some crumbly blue cheese over the top.
Place in the oven for about 15-20 minutes at 400 degrees.
Remove when the top looks melted.
Drizzle some blue cheese dressing over any of the tortillas you want, leave some non covered if you wish or if someone is pregnant.
(Note the crumbled blue cheese is cooked so it is safe.)
Sprinkle some of the cute green scallions over top and then serve up with some sour cream!

Here is is!

There seems like a lot of steps but if you watch the video below you will notice it is very simple.  You do a little bit of mixing, topping, them baking!  They really came out good, a little heat but that blue cheese also makes them taste like buffalo chicken.  Almost like our buffalo chicken dip all wrapped up and hand held!  We do hope you check out the video below, this dish is so super simple and you can totally surprise the family with it!

There you have it!  Very simple but fun, we think you and your family will enjoy it.  Give it a try, why not right it takes less than 30 minutes!  We do hope you enjoyed this post and others like it we have been putting out.  Check out our other dishes and be sure to stay tuned for more to come!

Turkey Cheddar Panini

Hey all!
We wanted to drop a very easy and fun lunch or dinner idea for you!  The Panini is nothing new we admit.  However how you make it can be!  We wanted to show you a fun way to put a very delicious meal together for a very affordable cost.  Panini's are great because you can really make all different outcomes.  Dressing them up however you wish and just having fun with them.  We recommend getting a Panini grill.  They aren't expensive and can do so much more than cook your Panini!  Ask for one for a holiday or birthday even!  Chef loves his and uses it regularly.  However if you do not have one you can use the stove top and a pan.  We think the investment is worth it!

This also is a 30 minute meal and for some reason you skip the bacon part it is even shorter!  Cooking the bacon was the longest part!

Serves 1
Prep Time: 15 Minutes
Cook Time: 5 Minutes
Total Time: 20 Minutes

Ingredients: Bread (We used Rye but use something thin and large) 2 Slices of Sharp Cheddar Cheese Turkey. Thinly sliced. Onion Tomato
Bacon Strips Honey Mustard. Butter
Chips

Directions:
Prep all your ingredients. Cut the onions, tomatoes, cook the bacon. Ect...
We recommend larger thin bred like Panini bread. We went with a Rye and liked it.
Butter one side of the bread and leave it butter side up.
Next put your may, or mustard if you like on the other piece.
Layer of cheese on that.
Then layer your meat.
Then Layer the bacon.
Then anything like the tomatoes, Onions or anything else.
Then another slice of cheese.
Place the other piece of bread on top butter side up.
Heat your Panini Grill up and place the butter side of the Panini down.
Butter the top, or other side now and lower the Panini grill down.
Cook for several minutes till the bread is crispy and has nice line marks.
Remove and cut down the middle.
Serve up with a side like chips!

Here it is!

We hope you really liked this post. This is such a fun and simple meal to make! You can use different meats or non at all. Mix and match and try new ideas. The outside bread has that hard crispy texture and the inside of the panini is soft. It makes for such a great meal! We encourage you to check out this dish and the video below!

Thank you all again for joining us for this very fast and tasteful dish!  We really enjoyed this one because how fast it is to make!  The flavors are up to you so be creative!  Thanks again for joining us and we do hope you try this meal out.
