BBQ Venison Meatballs Wrapped in Bacon

 Hello All and Happy Holidays!

      Yes this was created on Christmas Eve and we want to wish everyone a very happy and safe holiday!  If you celebrate Christmas we think you will enjoy this post, if you do not, we think you will enjoy it more!  So did everyone hear the big news!  Santa is NOT coming for Christmas!

     He stopped by the house and well now his deer are wrapped in Bacon and coated in a BBQ honey sauce...  Looks like everyone has been bad this year!  Well no need to panic everyone!  Well nobody reads or watches our show so were not worried.  However yes this is Venison, no Rain Deer were harmed in the filming of this post/show.  Today however we are showing you how to make a great easy and different style meat ball.  We are doing Venison Balls!  Easy and cheap, they are "under a buck".  We do think if you enjoy Venison you will enjoy this meal!

Note you can use only one pound of meat and cut the ingredients in half for a smaller sized amount.

Serves 15-20

Prep Time: 10 Minutes
Cook Time: 30 Minutes
Total Time: 40 Minutes

Ingredients:
2 Pounds of Venison ground meat
1/2 Cup Italian Style Bread Crumbs
1/4 Cup Milk
1 Egg
1 Table Spoon Chili Powder
2 Table Spoons Olive Oil
1 Table Spoon Garlic Powder
1 1/2 Table Spoons of Italian Seasoning.  You can make it with, dried Parsley, dried Basil, Dried Oregano, and dried Thyme.  about 1/2 teaspoon of each.
Pinch of Salt and Pepper
1/3 Cup of Parmesan Cheese
1 package of bacon.
BBQ Sauce- This is for the glaze so amounts depend on how many you make.
Honey- This is for the glaze so amounts depend on how many you make.

Directions:
Place the two pounds of meat in a large bowl.
Season with Salt, Pepper and Garlic Powder
In a medium bowl add the bread crumbs, milk, egg, Italian seasoning, olive oil and Parmesan cheese.
Mix all the ingredients well into a paste substance.
Add the paste to the meat and stir in very well.
Place tin foil down over a cooking sheet and spray with non stick solution
Heat your oven to  350 degrees Fahrenheit
Cut the bacon in half or thirds.
With a small or medium ice cream scoop, scoop the meat into a ball form and place it on the tin foil.
Repeat till the pan is covered.
Wrap a piece of bacon around the meat ball and put a tooth pick through it holding it together.
Once set place the tray in the oven and let cook at  350 degrees Fahrenheit for 20 minutes.
While cooking mix your BBQ Sauce and Honey.  In a small bowl add 3 parts BBQ to 1 Part honey.  How much is up to how many meat balls you are doing.  Don't stress on this part its just the glaze.
After 20 minutes remove and with a brush, brush on the glaze over all the meatballs, turning them and getting all of them covered.
Place back in the oven for 5 minutes.
Remove after 5 minutes and re-glaze again.
Place back in the oven for 5 more minutes.
Remove and plate.
Serve!


     You can either do small meatballs or make larger ones with a whole strip of bacon around each one.  This is really up to you!  We really hope you try this post out and yes you can use beef if you can not get Venison or do not like it.  If you are looking for Venison ideas we do hope you check this dish and others like it out!  Check out the video below to see how we make this dish as well!

Chicken Caesar Salad Wrap

Hello all!

     Today we bring you yet another easy and fun lunch to try out!  Chicken Caesar Salad Wraps are very popular, but expensive if you go out to dine.  Here is a way you can save some money and impress your family!  Many people think making this dish is complex but we have a few tips for you and some ways to not only save a buck, but look good doing it!

     This dish has been around for a while and we are not sure if someone just got bored with their salad and made it easier to eat or if someone was just thinking outside the box.  Growing up Chef has made these many times in all the restaurants he has worked in and now he wants to show you how he makes them home.

Serves 6-8

Prep Time: 25 Minutes
Cook Time: 15 Minutes
Total Time: 40 Minutes

Ingredients:
1 Package of Chicken Tenderloins (usually contain 6-8 strips)
2 Cups all purpose flour
3 Eggs
2 Cups Italian seasoned bread crumbs you can also use Crushed Corn flakes.  or try both!
1 Table spoon water
Salt
Pepper
Garlic Powder
1 Package of Medium sized wraps
1 Caesar Salad Kit or 1 head of Romaine Lettuce, 1/2 cup croutons and 2 tbs cup pram cheese, 1/4 cup of Caesar dressing.
The Kit is easier and sold in all larger stores.
Oil for frying.
Anchovies- If you want!

Directions:
Under cold water, wash the chicken and pat dry.
Use a pinch of salt, pepper and garlic powder and sprinkle on each side of the chicken.
Place the flour in a mixing pan.
Scramble the eggs and add water to another mixing pan.
Add your bread crumbs or corn flake crumbs to the last pan.
Lightly salt and pepper each pan and mix around.
Dredge a piece of chicken int he flour.
Move it to the egg pan and coat it in the egg wash.
Move it to the bread crumb pan and coat the piece in bread crumbs.
Move to  plate and repeat!
Make sure all the chicken pieces have gone through all 3 pans and put on a plate.
Place the plate in the fridge for 15 minutes so the bread crumbs can adhere to the chicken.
Heat up enough oil to just cover half the chicken strips in a pan.
When the oil is hot place the strips in the pan and cook for 3-4 minutes per side.
Flip and repeat.  Checking the chicken.  Chicken is fully cooked at 165 Fahrenheit.
Take the chicken off and cut into pieces.
Make your Salad mix, either with the bag or cutting up the lettuce and mixing in the other ingredients, do not mix the dressing yet.
Place the chicken on top of the salad and mix in.
Mix in the dressing now.
Place a wrap down and place a some of the salad toward the front of the wrap. Add anchovies if you wish.
Wrap up the salad and place two tooth picks on either side.
Cut down the middle of the wrap making it in 1/2 now.
Plate up with a side of your choice and serve!

     The directions look long but there are just small steps that make it look long.  I would suggest watching the video to see how we do it.  The lunch is very simple and after you see how we do this meal it will make more sense.  Sometimes writing out directions can be long and drawn out which is why we do a video as well.  Read over this post, watch the video and let us know of any questions.  The dish is very easy.

Cheesy Chicken and Broccoli

Hello all!
   
     Looking for a quick and new kind of dish to warm you up?  Check out our newest 30 Minute meal!  This Cheesy Chicken dish will be sure to warm you up and make the family wonder where you found this awesome dish!  You can tell them it was your idea, just as long as your share our video on social media.  (Deal?)  We do hope you try this meal we do think you will enjoy it.  With the holidays coming a quick meal is what we all need right now!  Also note our dishes are blueprints so if you want to substituent ingredients you can!  Have fun with your dish and make it your own unique masterpiece...

Prep Time: 5 Minutes
Cook Time: 25 Minutes
Total Time: 30 Minutes

Serves: 4

Ingredients:
2 Table Spoons of Oil
1 Pound of Chicken Tenderloins work great.
1 Table Spoon Salt
1 Table Spoon of Pepper
1 Table Spoon of Garlic Powder
1 1/2 Half Cup of Broccoli
1 Cup of sliced Carrorts
2 Cups of Pasta.  Chef used Spirals
32 Ounces of Chicken Broth
1/2 Cup of Heavy Cream
1 Cup of Sharp Cheddar Cheese


Directions:
Wash and dry the chicken
Cut into 1/2 inch or larger pieces
Season lightly with Salt, Pepper, Garlic Powder
Heat up the oil in a pan and then add Chicken.
Cook Chicken fully
Lightly season with Salt, Pepper and Garlic
Add Broccoli and sir in.
Add Carrots in.
Add the Pasta in and stir.
Add Chicken broth and mix well.
Add Cream then stir again.
Bring up to a boil for a a few minutes
Lower to a simmer 15- 20 Minutes.
Sprinkle in the Garlic Powder.
Add the shredded sharp cheddar cheese and mix well.
Let simmer a few more minutes.
When it is to your liking place in a bowl and sprinkle some shredded sharp cheddar cheese on top.
Enjoy!


     Just so you know as well, the simmering part needs to take about twenty or so minutes so don't be scared because it takes time for the sauce to simmer down.  We do really think you will enjoy this meal and if you have any questions let us know in the comments below, or leave a comment on the video page!  As you can see from our picture below it did come our really nice.  A very colorful dish with lots of hearty ingredients!

BBQ Pulled Chicken

     Hello all and welcome back!  Are you tired of pulled pork?  Check out this great new recipe we have for you!  BBQ Pulled Chicken!  Try something new and exciting, also very easy!  Everyone has pulled pork!  So be different and pull your chicken!  (no pun intended).  This is such an easy meal you can have it ready by dinner time in a few hours!

     We also are excited to share with you this new section called "Low and Slow".  With the winter months now approaching we wanted to get a new section started for those who like to use slow cookers!  You can do dinners, lunches, even appetizers!  he slow cooker is such a amazing tool to have in your kitchen and they are usually all very inexpensive to purchase!  They really make great gifts as well so if you do not have one, ask for one from your family!  With the right care and cleaning you will own yours for years!  There are also so many different amazing meals you can do which we intend to get into!    

Time Frame:
Prep Time: 10 Minutes
Cook Time: 4-5 hours depending on if the chicken is thawed or cutlets vs breast.
Total Time: Over 4 hours...

Ingredients:
6 frozen or thawed boneless skinless chicken breasts ( we used thin sliced cutlets)
1 (12 oz) bottle of your favorite BBQ sauce
½ cup of Italian dressing
¼ cup brown sugar (can add more if need to)
2 tablespoons of Worcestershire sauce
Pinch of Salt, Pepper and Garlic Powder 


Directions:
We used thinly slicked chicken cutlets, you can use chicken breast its better to have them thawed.
Take your chicken and season both sides with salt, pepper and garlic powder.
In a large bowl mix the brown sugar, Worcestershire sauce, Italian dressing and BBQ Sauce.
Mix well together.
Place the chicken in the slow cooker.
Pour the sauce over top and close the lid.
Turn the slow cooker to low.
Cook for about 2.5 hours to 3 hours.  For thin cutlets.  For Breast Cook for about 4-6 hours.  This is for thawed chicken.
After about 2.5 hours start to pull the chicken and see how it looks.  Continue to pull if the chicken is pulling easily.
Turn the temperature to the Warm setting and with the cover off let cook another 1/2 hour or so.
Plate up on a sandwich or not, and serve with a few sides you like and then enjoy!


     As you can see from the picture, it looks amazing and yes it was!  This meal comes out with such ease.  We really hope you keep this post and try it out!  Chef served it up with some pasta salad and broiled broccoli.  A very good combo if you ask me!  Please check out the video below to see how its made and be sure to subscribe if you haven't already.  It would really help us out.

Chocolate Croissants

     Hello all!

     We are back with another great recipe this time its breakfast!  Everyone loves a good pastry!  Here is such an easy recipe that you can put together in just a matter of a few minutes!  When it comes to Breakfast we try to get you ideas that taste great, but are also quicker.  We know sometimes this meal is rushed especially during the school week.  We love a good morning meal that can take a bit of time however sometimes you need to get things done so here is a nice quick and easy idea!

Please note for the glaze below, chef noticed he had extra so if you want to cut the amounts in half you still will have enough.

Serves 8-12

Prep Time: 10 Minutes
Cook Time: 8-10 Minutes
Total Time: 20 Minutes

Ingredients: 
8-12 Crescent Rolls (Store bought or homemade) 
1 Bag of Milk Chocolate Chips
1/3 Cup of Sugar
1 Teaspoon Corn Starch
4 Eggs
1 Teaspoon Ground Cinnamon 
1 Cup Milk
1/2 Cup half and half cream
Non Stick Cooking Spray


Directions:
Take your Croissant rolls and with a small knife cut the center just a slit.
Put 2-3 table spoons of chocolate chips inside and place the roll aside. 
In large bowl mix the sugar, cinnamon
Add the milk, half and half cream 
With a whisk mix up until blended  
Heat up your oven to 400 Degrees.
You can use a brush or just dip the top of the croissant roll completely in the mixed glaze. 
Spray a baking sheet with non stick spray.
Place the Croissants on the pan and place in the oven.  
Bake for 8-10 minutes.
Take out and let cool for a minute then plate up!

Enjoy!



     As you can see they came out looking amazing.  The glaze gives them a nice crunch then you get to the nice chocolaty center.  What Chef likes so much about this meal is, it is cheap and easy.  You can buy store made croissants that aren't expensive.  If you want to make your own we say go for it!  However with the demand of a busy day or kids we totally understand!  It will be our little secret!  




     We really hope you enjoyed this video and remember you can make the glaze the night before then cook them in the morning for the kids!  This way they don't have to have cereal all the time.  This will be a fun different take on breakfast, they can bring them to school and show them off too!
