Thanksgiving Leftovers Egg Roll's

     We hope everyone had a wonderful holiday and remembered what they are thankful for.  So with all those leftovers what to do?  Do you make your leftover turkey sandwiches or heat them up for some class.  How about a different approach!  Taking the leftovers, wrapping them up and frying them!  A different take on your leftover lunches!  This dish is so simple to make and you should have all the ingredients!

Serves 8

Prep Time: 5 Minutes
Cook Time: 5 Minutes
Total Time:  10 Minutes

1 Cup Mashed Potatoes
1 Cup Stuffing
1 Cup Turkey
1 Egg
1 Ounce Water
1 Package of large Wanton wrappers.
Oil  (Canola, Peanut or Vegetable works best.)

In a large bowl add the mashed potatoes, stuffing and turkey.
Mix well
Crack one or two eggs and beat, mix in water to make egg wash.
Take your wanton wrapper and place 1 to 1 1/2 spoon fulls of mix.
Place it by the corner and roll the wrap up.
Fold in each side and keep rolling.
Use a brush to brush a little egg wash on the corner and finish rolling.
Fill a pan with your oil and heat it to 350 degrees.  Fill the pan so the egg rolls are not complete covered in oil.
Place the egg rolls in the oil and watch carefully.
Let them cook about 1-2 minutes or until golden brown.
Flip over and cook the other side.
Once cooked, remove and plate.
Heat up your left over gravy, or make a new batch if needed.

Serve the egg rolls with the gravy and enjoy!

     We think you will really enjoy this fun snack or appetizer.  As you can see from the picture above, they look just like other egg rolls.  When you bit into them you can taste and see the amazing stuffing.  Which is the turkey, stuffing and mashed potatoes.  We do hope you check the video below, and check out other videos for great cooking meals and tips!

Venison Steak with Pan Jus

     Hello all,

    With Thanksgiving just around the corner we thought we would give you a break and cook something new and exciting!  With your new Venison and Game playlist started we wanted to start you off with Venison Steaks!  We are cooking Venison Round Steaks today, a very lean meat and full of flavor without the fat content!

     Yes Venison is deer and lots may be turned off by this playlist or video but we also know there are a lot of people that depend on it to feed their families.  There are a lot of hunters that support their families this way and hunting is perfectly legal, and has been around since people have been eating meat.  There are a few family members of our team that hunt.  All follow safe guidelines and all use the meat when the hunt is over.  None of them just hunt for sport and leave the animal.  With a lot of people upset about hunters the team has a general feeling that if you hunt to feed others, yet enjoy the sport of it that isn't a big deal.  Hunting also allows the animal to be free in the wild.  Most will speak badly about hunters then go buy beef where the cow was raised and then killed with no chance of even escape.

     A few of the team members have been raised on Venison for since they were children.  Our very own chef comes from a line of hunters in his family.  However he doesn't currently hunt himself he gladly takes in the meat to feed his family, team and others.  He also knows how lean the meat is and how flavorful it can be.  Since Venison and Game animals live in the wild they don't need to be pumped with, well what ever people do to make animals that way.  There are no antibiotics as well in the animal so animals like deer are all natural.

     We really hope we get some good feed back about this play list and want to show you more meals you can prepare with all different animals we may have come along.

Serves:  4

1 Package of Venison Round Steak.  Should contain about 4 pieces.
Pinch of Salt
Pinch of Pepper
Pinch of Garlic powder
1 Table spoon course seasoning.  (Like your basic Montreal steak seasoning)
1 Table spoon butter
1 Table spoon oil, per side of each steak.
1/4 Cup Beef Broth
1/4 Cup Red Wine
Few Leaves of Rosemary
Few Leaves of Thyme
Mashed Potatoes. Homemade or instant, we don't judge. (We can't, they were instant in the video!)

Lightly season each side of the steaks with fine salt, pepper and garlic powder.
Let sit out for about 1/2 hour.
Then sprinkle the course rub on and pat in let sit another 10 minutes.
Drizzle about 1 tablespoon of canola oil over each side.
Heat your oven to  400 Degrees
Heat an oven safe pan up to high heat.
Heat up the butter.
Lay the Steaks on the pan and let cook for about 15 seconds, this will sear the meat and give that nice crust.
Flip and let sear on the other side again for 15 seconds.
Place the pan in the over for about 5-10 minutes, depending how cooked you like your steak.
Remove and place the meat on a plate to let rest.
Add the beef broth, wine and leaves to the drippings in your pan.
On medium heat let cook for about 5-10 minutes then turn off.
Cut the meat in thin strips and place over the mashed potatoes.
With a spoon drizzle the pan sauce lightly over the meat.
Lay a few pieces of Thyme leaves over top for garnish.
Serve hot and add a vegetable if you would like as a side.

     We think you will really enjoy this meal and one thing to remember, Venison is not very thick per how it is usually prepared so because the meet will be thinner the cook times are thinner.  If you were to have a 1.5 to 2 inch steak, the searing and cooking times would be very different.

     So if you like medium rare watch the meat carefully, and check it in the oven about 5 minutes in.  Also remember when the meat is resting on the side after you remove it, the temperature will rise and meat will cook some more.

     We really hope you enjoyed this post and the video is below so please check that out.  If you haven't subscribed yet please do!  Remember in life and in cooking always try new things!  You may really enjoy them.  Like chef said, Venison is very lean and a healthy substitute to other meats.  Also one thing he loved was he paid about $40 for the deer he received.  It was all packaged and processed and there was about 2 large boxes.  He said it was such a deal.  If you find a hunter that has extra or will only charge you for the processing of the meat, look into it!  The price is so much cheaper, and many hunters like to hunt anyway so they probably will only charge your for the processing.

Eggplant Parmesan

     Hello all,  we hope you are all having a wonderful fall and today we wanted to share a very easy and delicious recipe!  Eggplant Parmesan!  This meal is considered to be kind of a younger brother to the classic chicken parm dish.  You however probably saw both dishes on a menu at one point while eating out.  A lot of people may pass by this dish however feeling it may not be filling, however it is very much so!  It also is very inexpensive to make, especially if you grow the eggplant or have friends that grow it and share their harvest with you!

     Eggplant isn't expensive, however growing the vegetable or getting it from frineds will more than likely not have any pesticides and will be considered organic per nothing was used to tamper with the growing of the product.  This dish also is healthy per eggplant has many positive values, such as it is high in vitamins and minerals.  It is also rich in fiber as well as antioxidants and free radicals that help support brain function.   The season for eggplant is August through October however depending on the weather you can still have some left for the winter season.  Eggplant can also be frozen to be used at a later date, we suggest doing some proper research to make sure you are freezing this or other foods correctly.  Please also feel free to look up different benefits of how amazing this vegetable is!

Serves: 4-6

Prep Time: 10 Minutes
Cook Time 25 Minutes
Total Time: 35 Minutes

1 Eggplant.  Make sure it is dark in color, firm to the touch and in good shape. Ours was from a local garden.
2 Cups all purpose flower
3 Eggs
2 Cups Italian style bread crumbs
1 ounce of water
Shredded Parmesan Cheese
Grated Parmesan Cheese
1 Bunch of fresh parsley
Fresh Mozzarella cheese
Pinch of Salt
Pinch of Pepper
1 Jar  of Red Sauce
Oil for cooking

Wash the Eggplant under cold water and pat dry.
Remove the green stem and cut the both ends off
Slice the Eggplant about 1/4 inch all the way down.
In three septet containers make your mixing area.
Place the flour in one with some salt and pepper
Scramble your eggs in the next with the water, and salt and pepper
Place the bread crumbs in the last, with the pinch of salt and pepper as well.
Place a few pieces of eggplant in the flour and coat well.
Move to the egg wash and coat again.
Move to the bread crumbs for the final coat.
Once fully coated place on a plate to let sit.
Once all the pieces are fully coated let them sit about 15 minutes either out or in the firdge.  This will allow the bread crumbs to fully set and adhere to the eggplant.
Chop up the parsley and start to cut the fresh Mozzarella cheese into pieces.
In a pan place just enough oil to cover 1/2 of the eggplant.  You don't wan them fully covered.
Let the oil heat up to about 350 degrees then place the pieces in.
Let cook for 3-4 minutes or until golden brown, flip and repeat.
Take them off and place them on a baking sheet.
Have your oven preheated to 350 degrees
With a table spoon place some red sauce over each eggplant.
Then cover with a piece of fresh mozzarella cheese.
Sprinkle some grated Parmesan cheese over top
Then sprinkle some of the chopped up parsley.
Place the pan in the over and let bake for about  5-10 minutes or until the cheese is melted and browned.
You can now serve up with either pasta or a healthy vegetable.  
Serve hot!

     The steps seem long but as you watch the video you will see they are not that intense.  We just wrote them out ever step by step.  As you can see below they came out golden brown, they had a great taste to them and if you want to add more sauce fee free to!  Below is our video so please check that out if you haven't seen it yet.

100,000 SUBSCRIBER BONANZA!!!!|Honey Pecan Salmon

Hello all!

Kinda, it's actually 100...

     As you can see we hit a landmark!  Well we actually hit 100 SUBSCRIBERS, so whats a few zeros and a comma!  So we did it, one of the biggest milestones for You Tubers is actually the 100 Subscriber point.  They say it is one of the hardest per you are just starting off and getting there is difficult.  We wanted to celebrate this with a nice healthy dish we think you will really enjoy!  If you like fish/seafood you will enjoy this!  If you are just starting to try fish, this dish will not be a bad one to try.  Salmon is very healthy and easy to make.  With just a few ingredients and your oven you can put this amazing dish together in just a few minutes!

     We really think you will enjoy this dish and we hope you do try it.  The Cooking Corner loves making great fun dishes, but also wants our viewers to know fun and great tasting can also be healthy and beneficial to you! Below are all the ingredients and directions be sure to check them out and see our video below!  If we are ever going to hit 1,000 subscribers we will need your help so subscribe please!

Serves 2

Prep Time: 5 Minutes
Cook Time: 15-20 Minutes
Total Time: 25-30 Minutes

2 Fresh caught salmon.  Also note you can use farm raised salmon if there is no fresh caught available.  Look for the darkest salmon, the darker the color the better.
1 Cub of pure farm bough Honey
2 Table spoons of crushed Pecans
1 Table Spoon Brown Sugar
4 Cups Broccoli cut up
2 Ounces of Olive Oil
2 Table spoons of of Salt
2 Table spoons of Pepper
2 Table spoons of Powder
2 Cups of Quinoa

Rinse the salmon under cold water and pat dry.
Lightly season with salt, pepper and garlic powder, on both sides then let rest.
In a large bowl mix the broccoli, table spoon of salt, pepper and garlic powder.
In a smaller bowl mix the brown sugar, honey and chopped pecans.  Chop the pecans in a mixer if you can't buy them chopped up.  Chef chopped his own.
Add more honey if needed and mix up till it is a thick glaze.
Either heat up a cast iron skillet or place tin foil on a cooking sheet if you do not have cast iron.
(Heating up the cast iron will allow the fish to cook and not stick)
Place your fish in the skillet or sheet pan and surround with the seasoned broccoli
Glace the salmon with your honey pecan glaze, place a nice thick coat on.
Have your oven set to broil and place in.
Depending on how how your oven gets you need between 15-20 minutes.  Do not have the fish to close to the top, second setting down is good.
Cook the Quinoa.
Check the fish every few minutes, if the boccie is getting crispy as well as the fish you are good.
You want the fish to look crispy and the broccoli to have black charred tops.
Remove and plate up.
Drizzle any reaming glaze over top and serve over a bead of Quinoa or not up to you.

     There you have it! Looks amazing and has a great sweet taste, the broccoli will cook with that glaze as well making them crispy and sweet!  This dish is different unique and very healthy, one of Chef's very own original.

Asparagus Parmesan

     Hello all!
     We wanted to share a very easy and great side for almost any main dish.  Asparagus has many health benefits such as it is high in many minerals and fiber.  Green vegetables are also very good for your immune system and help your liver and kidneys function.  They clean out major organs like this, aside from that funny smell everyone knows about the vegetable is also has a very good taste and you can make it all different kinds of ways.   You can also pick them up at your local store or market for a pretty cheap price.  I have even bought them frozen which is still good because picked fruits and vegetables are usually flash frozen so they retain the minerals and nutrients.

     So below is a great oven roasted side dish you can put with chicken, beef, fish or even alone if you wish for a healthy snack.  You can also place this on a salad to mix it up!

Serves 4-6 Depending on the bundle you get.

Prep Time: 5 Minutes
Cook Time: 20 Minutes
Total Time: 25 Minutes

Asparagus: 1 bundle or package is about 4 servings
Cooking Oil-we use Coconut oil or Olive oil    
Parmesan cheese grated

Heat your oven to 350
Rinse off the Asparagus and dry
Cut the bottoms off about .5 to 1 inch from the bottom
Lay the Asparagus flat on a tray like a cookie sheet, make sure it has a lip around
Drizzle olive oil on the Asparagus, just go back and fourth from top to bottom don't over drizzle.
Sprinkle the Parmesan cheese over the Asparagus.
Place the tray in the oven and cook for about 20 minutes you can go longer if you would like.  Test them my sicking a fork in the Asparagus and see how tough they are.
Take out and place on your dish and enjoy!

     We think you will enjoy this dish, it's really easy to make and is healthy too.  We like to have it when we eat chicken or fish.  Honestly it also makes a great side dish if you can't decide or if you are both saying no to a vegetable the other is offering.  

     With such an easy dish we think you will be making this more often then not!  The team likes this dish because it is healthy, taste great and goes with everything.  Also if you are just stumped on a side, cook this!  You just need 3 ingredients and it takes less than a half an hour.  Friends of our team say they use this as a go to now and it has helped them complete many meals!
