Halloween Quesadilla's

     Hey all!  We are about half way through October and having lots of fun!  We have a great 30 minute meal for you as well!  We hope everyone is watching scary movies and getting into the festivities!  Halloween is a time to get spooky as well as it is the first holiday to start the fall kick off!  We want everyone to be safe of course and today we have a fun and easy meal for you and the fam!  This one is kid safe and we think you will love it.  We never made Quesadilla's yet on our site so why not start now!  These Halloween ones will be a hit for dinner!  They are very simple and the kids will really enjoy the fun designs you make with them!  Check it out!


Prep Time: 5 Minutes Cook Time: 15 Minutes Total Time: 20 Minuts

Feeds:  2-4    



Ingredients:

Med sized Tortillas (You can use Gluten free ones too!) 2 Cups Cooked Rotisserie Chicken 1/2 Tablespoon Lime Juice Pinch of Garlic Powder Pinch of Cayenne Powder Mexican Cheese (How much you want to use) Canola Oil Hot Sauce for serving


Directions: Cut a design into your tortilla, (the bottom remains uncut.) Heat oven to 425 degrees. Shred 2 cups of cooked rotisserie chicken up and place in a large bowl. Add the Lime juice, and seasonings. Mix well Spray a cooking sheet with cooking spray and place uncut tortillas on it. Add chicken, then cheese and put the tops that have the design on top. Brush a little oil on top of each tortilla. Place in the 425 degree oven for about 15 minutes.

Remove and serve up with some hot sauce on top to make them spooky!

They came out wonderful and tasted really good!  They also were so fun to make.  Sometimes our favorite video's to make are the simple ones!  We know how busy everyone can get so these 30 min meals are so important sometimes!  Check out how we made them down below!

Easy Mac and Cheese

 Hey all!

     We know we are so many post behind and are sorry!  For anyone reading these.  We are going to update our blog.  We wanted to kick this season off with a classic.  Mac and Cheese!  This is one of our easiest dishes.  We got the recipe from our Copper Chef book, thank you Copper Chef.  This dish is only a few ingredients and some cook time.  This is our 3rd video/blog on Mac and Cheese so we are excited to show you our simple and fast recipe.  We know there are so many out there and we do hope you try this one out.  A great fall starter and great for the family.  Check it out below!

  • Prep Time: Under a Minute
  • Cook Time: 1 Hour
  • Total Time:  1 Hour

Ingredients:
1 LB Elbow Macaroni (You can use Gluten Free if you want) 1 Cup Cold Water 1 QT Heavy Cream 1 Tbsp of Cornstarch 2 Cups Shredded Cheddar Cheese Paprika

Directions:
In your Copper Chef Pot or a pot that size put the Macaroni, water, cream cornstarch and cheddar cheese in.
Stir around.
Turn heat to low.
Monitor and stir every so often. About an hour should cook it fully.

"Thee" Fried Chicken Sandwich

Hey everyone!

Today we are gonna show you how to make a fried chicken sandwich. This sandwich is so simple and easy you are gonna love it! Now you can make up restaurant style fried chicken sandwich's for your family and friends! You can also mix up the spices we used and try ones you might like better we just want to give you all a base to how to make this. We can't tell you how amazing this did come out. We do hope you try this and everyone have a fun and safe 4 of July! We do know there are so many great different recipes out there for this and we do hope you try ours! We made it as simple as we could and yes, it came out amazing! In fact we have made these many times since this release!

Prep Time: 4-8 Hrs
Cook Time: 5 Minutes
Total Time: 4-8+ Hrs

Serves: 4-6

Ingredients: Thin sliced chick breast cutlets. (Cut in half and pounded lightly) Buttermilk (Enough to cover the chicken in a bowl) 2 Tablespoons Salt (1 For wet, 1 for dry mix) 2 Tablespoons Pepper (1 for wet, 1 for dry mix) 1 Tablespoon Paprika (Wet Mix) 1 Tablespoon Smoked Paprika (Dry Mix) 1 Tablespoon Garlic Powder (Dry Mix) Oil for frying Buns Sliced Pickles Shredded Lettuce

Directions:
Lay out the Thinly Sliced Chicken Cutlets and use a meat mallet to tenderize. Use gently.
In a large bowl add the buttermilk, salt, pepper and paprika.
Mix well
Place the chicken in the buttermilk mix and put the bowl in the fridge for anywhere from 4 hours to over night.
Just before you fry get your dry ingredients ready.
In a large bowl add your flour, salt, pepper, smoked paprika and garlic powder.
Mix well.
Heat up oil to 375 and get all your bowls ready.
Take a piece of chicken from the wet buttermilk bowl and dredge it in the flour bowl. Make sure the chicken is coated well. Do this for a few pieces and place in the hot oil. Don't over crowed the oil.
When putting the chicken in the oil lay it in slow and move it side to side so it goes in slow. This will be a safer approach.
Watch the chicken and flip them in the oil after a few minutes. When the chicken is cooked it will float to the top of the oil. Chicken is also done at 365 degrees. They won't take long since they are think pieces.
When the chicken is golden brown and cooked remove it and put it on a tray then put the tray in a warm oven. About 200 degrees. This will crisp them up more and keep them from cooling down as you continue to cook!
Once all the chicken is cooked remove and start plating them up!
Decorate the bun however you like and serve up! We suggest nice crispy fries!

Here it is!

As you can see it does have a great look! It was so good too! Very crispy on the outside and soft and juicy on the inside. A great fried chicken combo! You can mix this up with different spices in the wet and dry ingredients as well as make your own cool mayo but we keep it pretty simple! Check out how we did this below!

Easy Ass Nacho's

He all!

Like easy things? Then look no more. We have some easy ass nacho's! This dish is so easy to make and we think you will love it! Make great for a movie or game on TV! You can put this together fast! With a few key ingredients you can also mix those up as well! Give this easy dish a try and have a great start to summer everyone! This dish is also Gluten Free just make sure you don't use bread an all seasonings are gluten free.


Prep Time: 15 Minutes Cook Time: 5 Minutes
Total Time: 20 Minutes

Serves 6-8
Ingredients: 1 lb ground beef 1 Bag of Scoops Shredded Cheddar Cheese Salsa Sour Cream 1 Packet of Taco Seasoning 3/4 Cup Water Any other ingredients you would like!

Directions: Preheat your oven 375 degrees.
Cook up the ground beef until it is all fully brown.
Add seasoning and water and continue to cook.
Spread out scoops on a large cooking sheet evenly.
With a spoon place some meat in each Scoop.
With a spoon place some salsa in each Scoop.
Sprinkle the sharp cheddar cheese all over the nacho's.
Place the tray in the oven for about 5 or so minutes or until cheese is melted.
Remove and plate up.
Add sour cream to the top and serve!

Grilled French Fries

 Hey everyone!

     We have a fun side for you!  Now a lot of people know about French Fries.  They know they are mainly fried in oil or oven backed.  However today we are going to grill them!  Nice large seasoned fries!  Chef said he hasn't even tried them yet so he is so excited!  This makes for a great new taste on fries along with some cool grill marks.  This is also nice if you are grilling burgers or hot dogs you can grill everything at once and not worry about running to the fryer!  Check this video out below and yes this one is also Gluten Free.  Just always of course check the seasonings. 


Prep Time: 10 Minutes
Cook Time:15 Minutes
Total Time: 25 Minutes

Serves: 6-8 


Ingredients: Potatoes (We used Russetts) Melted Butter 1 Tbsp Ground Bay leaves 1 1/2 Tsp dry mustard 1 Tsp Ground Ginger 1/2 Tsp Allspice 1 Tsp Chilipowder 1 Tsp Paprika 1/2 Tsp Cinnamon 1 Tsp Garlic Powder Pinch of Salt and Pepper

Directions: Wash the potatoes and dry. Cut them into wedges. Place them in a steamer pot. (Or boiling water if you don't have a steamer pot) Steam them for just a few minutes. While they are steaming in a large bowl mix all the seasonings together. (Feel free to use others you like as well!) Mix well and put aside. Once the potato's are soft but not to soft remove them and pat them dry. Brush the fries wit either melted butter or oil to glaze them. Sprinkle the rub you made over the fries and flip and get the other side. Place them on your hot grill spaced apart evenly. Let cook for several minutes and flip. Grill other side for several minutes and remove.

Here they are!


They came out really good! A nice char and crispy outside with a tender almost mashed like potato inside! We were very happy with the outcome and it was nice not to use oil. You can mix up the seasonings however you feel but do give this a try. Check out our video below to see how we did this!
