Bison Burgers

Hello All!
     We have a special treat for you.  A Bison Burger, we wanted to try something new and share a different approach to a regular burger.  Bison is typically grass fed and has a lot fat count.  The meat is very red which is good.  With a smaller fat count however you do need to watch the burger more closely as it can dry out or burn easier.  It is a bit more expensive however depending on where you live but try something new chef says.

Serves: 4
Prep Time: 20 Minutes  *(Burgers can sit up to overnight in the fridge)
Cook Time: 5 Minutes
Total Time: 25 Minutes


Ingredients: 1 Lb Bison Ground Meat. (1/4 Lb per person) 1 Tomato 1 Onion 1 Package of Soft Rolls 1 Egg (to mix with meat before patties are formed) Salt Pepper Any other toppings. Ketchup Mustard Mayo Fires make the best side!

Directions:
Take out the bison meat and place it in a bowl.
Add one egg and mix well.
Form up 4 patties or use a patty maker.
Place back in the fridge for 10 Minutes, up to over night.
Always remove your burgers about 10 minutes before your grill them, let them warm up a bit.
Before you grill, cut up all your toppings and get everything ready, once the burgers are cooked you don't want to waste time.
Lightly Salt, Pepper and olive oil each side of the burgers and edges.
With your grill hot place the burgers on it.
*Note place burgers that are meant to be cooked more on your grill sooner.
Salt, Pepper and lightly oil your onion slices.
Place them on the grill as well.
Lightly oil the bottoms of the buns.
Place them on the grill.  (Sooner you do, more crispy the buns will be)
Flip your burgers after the 2 1/2-3 minute mark.
After about 3 minutes on each side brush some butter on the tops, let cook for 2 more minutes.
Flip, butter again and let cook longer for about 2 minutes.
Take off the buns and onions from the grill.
Place cheese on the burgers. (If you want it)
Place a bit of mayo on the bottom of the buns.
Add Lettuce, Tomato.
Place now the burger on the buns.
Now place the onion on the burger.
Serve up and let your friends and family add whatever else they want.

As you can see, this burger will go fast!

Oven Baked Haddock

Hello all!
     We wanted to give you our healthy version of a "Fish Fry".  This one however is oven baked!  Eating fish on Friday's is one many love to do however with this meal you can eat it anytime because this one is oven baked!  Same great taste and easy to make.  Fish also is so healthy, wild caught Haddock especially.  It is lean and filled with nutrients.

     We wanted to expand our seafood videos as well as show we do love healthy meals.  We think you really will enjoy this one!

Serves: 1-2
Prep Time: 10 Minutes
Cook Time: 20 Minutes
Total Time: 30 Minutes

Ingredients:
Fresh Haddock (1 filet per person)
1 Cup Flour
1 Cup Italian Bread Crumbs
4-5 Eggs
1 1/2 Ounces Milk
1 Table Spoon Smoked Paprika
1 Table Spoon Onion Powder
1 Table Spoon Garlic Powder
1 Table Spoon Italian Seasoning
Salt and Pepper
1 Lemon
Tarter Sauce

Directions:
Take out your piece of fresh Haddock lightly salt each side.
Setup your 3 stations.
Flour in the first
Egg and milk in the other
Italian Seasonings in the last.
Season the bread crumbs with the Paprika, Onion powder, garlic powder and Italian seasoning.
Dredge the fish through the flour and get a good coat.
Dip it in the egg wash and coat each side.
Move it to the bread crumbs making sure each side was coated.
Let the fish sit for about 5 minutes to let the bread crumbs settle on the fish.
Place in the oven at 375 Degrees for about 20 Minutes, checking every so often.
Cut up a lemon.
Once cooked remove and plate up with some tater sauce.


As you can see it really has a great look to it.

"Not'Cho" Cheese Taco Salad

Hello all!
What do you call cheese that's not yours!? "Nacho" Cheese! We think you will really enjoy this video and dish! This can be made for one person or a dish to pass. This dish was so fun to make because the team never made it before, it was totally new to us and very enjoyable! With so many different dips and salads that people share this one is very different and the uniqueness is what is so special.

Serves: 8-10
Prep Time: 5 Minutes
Cook Time: 15 Minutes
Total Time: 20 Minutes

Ingredients:
1 Lb Ground Beef
3/4 Cup Water
1 Package Taco Seasoning
Pinch AP Rub
3/4 Cup Black Beans
1 Cup Leafy Lettuce
1/2 Cup Cheddar Cheese
1/2 Cup Chopped Tomatoes
Catalina Dressing
Cheesy Corn Chips

Directions:
Brown up 1 lb of ground beef.  Use something with less fat like 90/10 or  95/5.
Once cooked add one package of taco seasoning and 3/4 cup water.
Continue to cook till the water is gone and the beef is now seasoned.
Put the beef in a separate bowl aside.
Add Beans
Add Tomatoes
Add Lettuce
Add Cheese
Drizzle the Catalina Dressing.
Mix all together.
On a serving plate, lay down your corn chips as a bed.
Spoon out the salad on top.
Serve and enjoy!

Veggie Spaghetti

Hello all!
   Looking for an amazing and healthy dish!  Keep reading then!  This dish is our Veggie Spaghetti, it is such a flavorful and healthy dish you won't believe you are eating vegetables!  Our team has been using the Veggetti for a while now and Chef really enjoys it.  It is very simple to use and can be used on so many different food groups!  The price is very well set and the product is easy to clean.

    In a day and age were healthy is important this meal is one we think you would really enjoy!

*This meal is Vegan if you just do not add the Cheese!  If you are interested, just drop that and check the sauce labels you use to of course.  

Serves: 4-6

Prep Time: 5 Minutes
Cook Time: 15 Minutes
Total Time:  20 Minutes

Ingredients:
1 Large Yellow Squash
3-4 Green Zucchini's 
1-1 1/2 cups chopped Onion
1 Tablespoon Minced Garlic
3-4 Table Spoons Olive Oil
Fresh Mozzarella, sliced 
Red Sauce
Shredded Parmasean Cheese
Basil 
Chopped Parsley 

Directions:
Wash all veggies and dry.
Cut both ends off your Zucchini and Squash
Place them in the Veggetti and spin them over a bowl to catch the pasta.
Heat up your oil and then cook the chopped onions, and garlic till brown.
In a steamer pot steam the pasta.  Steam them for only a few minutes so they are still crispy.
Cut your fresh Mozzarella cheese and heat up some red sauce.
After several minutes dump the pasta in the pan with the oil and onions/garlic.
Mix all together.
Place in a bowl.
Add some red sauce on top.
Place a piece or two of Mozzarella cheese on top.
Sprinkle with Shredded Parmesan cheese and parsley.
Garnish with Basil. 


What a view!!!!


    This dish is so delicious and such a healthy treat too.  It's fun to eat treats and tasty that may not be the best for you, but they will take a toll on your body.  Give your body a delicious meal some days and treat it to this!  We do hope you try this meal out is is very healthy and has an amazing taste to it!   Be sure to check our the video below!

Crispy Pork chop Cutlets

Hey all!
     Looking for a quick and very delicious meal!  Breaded and pan seared pork chops!  These came out so good and placing them over some creamy mashed potatoes with a veggie side!  You will be the absolute HERO at dinner!  This dish can really be done with a lot of things, like chicken, beef, even some vegetables.  One of the key's is to get very fresh and thin Pork Chop Cutlets.  Chef found some at his local grocery store that looked absolutely amazing so he picked them up and said this is our meal!

    One of the best things about this dish is just how easy it is.  Chef said to really look into getting a set of pans like he uses to flour, egg and then finalize them with breadcrumbs.  Three process pans actually sell together for this reason and you can find them all over.  The process is not difficult and the clean up is moderately simple as well.  However if done correctly you will have golden brown and very crispy cooked chops!  Please see below on how we did it!

Serves: 4
Prep Time: 10 Minutes
Cook Time: 10 Minutes
Total Time: 20 Minutes

Ingredients:
1 Package Thin Sliced Pork Chop Cutlets 3-4 Cups Flour 5-6 Eggs
2 Table Spoons Milk
Oil, just enough to coat the pan
Butter
3-4 Cups Italian Bread Crumbs 2 Table Spoons Parmesan Cheese 1 Table Spoon Smoked Paprika
1 Table Spoon Italian Seasonings Garlic Powder Salt and Pepper

Directions:
Take out your pork chops and make sure they are fresh or fully thawed.
Season them with salt, pepper and Garlic powder on both sides lightly and let rest.
Setup you 3 stations.
1 pan with Flour, one with Egg wash Scrambled eggs and milk), last with seasoned breadcrumbs.
Make sure all three pans are seasoned and mixed. (See Video for help)
Dredge the chops through the flour and get a good coat.
Then dip them in the egg mixture, again fully coated.
Then place them in the bread crumbs and fully coat.
If you want after to use a rolling pin lightly to press down on the chops you can but its not required.
Place the fully breaded chop aside and continue till all are done.
In a medium pan heat up some oil. Just enough to coat the bottom. You want to pan sear them not fully submerge the chops.
Once the oil is hot lay the chops on the pan and bring the oil down to medium.
Let them cook on medium for about 2 minutes, depending on thickness.
Once the edges start to show browning, place a small amount of butter in the pan. 3-4 small slices. This will darken the chops and really make them crispy.
Then flip them slowly and let cook again fro about 2 minutes.
Remove the chops and place on a cooking rack to drain and continue.
When cooking the rest remember to remove the oil and add fresh oil!
Adding fresh oil will make each batch golden brown.
Place the chops on some homemade mashed potatoes and have a side ready to go.

Here is our result.


As you can see they are golden brown. We did get to try them and yes the moisture held making them very tender and not try at all. They cut very easily and just had that amazing crunch to them. This was one of our fav's per how simple it is to make but also how delicious they came out. This dish is honestly very simple to make and we hope you do try it!

Smoked Chuck Roast

Hello all,
     We wanted to give you a more experienced BBQ/Smoke dish if you want to step up your game!  This smoked chuck roast is perfect for a lazy day where you can check the grill every so often.  When done you will have this beautiful smoked roast that you can slice up and serve on some beautiful onion roles.

     This roast will take a few hours to cook but in the end you will have this great smoky meat that goes great with a vegetable and a potato.  Your family and friends will really love it. 

This is Gluten Free however please use Gluten Free Roles.

Prep Time:  30 Minutes
Cook Time: 5 Hours
Total Time: 5 1/2 hours


Ingredients: 2 Chuck Roast Beef Rub (you can make your own or buy) Beef Broth 1 Package of Onion Rolls Horseradish
1-3 Onions
3-4 Table Spoons Balsamic Vinegar
Salt and Pepper Mayo Any sides you see fit

Directions:
Take your chuck roast out, make sure they are not frozen.
Season them with Beef Rub on both sides and all around the edges.
Let them res out as you get your charcoal started.
Set your grill for indirect heat and throw some wet chips in for smoking. We used Hickory
You can add a water pan if you like to
Make sure the temp is around 250 Degrees
Place both of the chucks on the indirect side, opposite the coals.
Cover and monitor for an hour and a half.
After flip them and rotate if needed for another 1 1/2 hour.
After you will be at the 3 hr mark.
Take them off and place them in a tin foil pan. Side by side.
Fill the pan with warm beef broth. Till they are almost submerged.
Cover the top with tin foil and back on the gill they go.
Let cook for 2 hours at around 200-230 degrees.
After 2 hours, remove from your grill and lift up a corner of the tin foil, let the steam out for about 5 minutes.
Recover and let sit. 1-2 hours rest.

While resting cook onions.
In a cast iron pan heat up butter.
Once the butter is hot add onions. Cut them to ring form.
Add 2 table spoons oil and salt and pepper.
Let them cook checking them every so often to stir.
Once they cooked down add a few table spoons of Balsamic vinegar continue to cook.

Remove the beef from the pans and slice up the beef.
Place it on an onion role and add onions to the top.
You can add a bit of mayo to horseradish to cut it a bit or not..
Put this on top to have a beautiful smoked Chuck Roast Sandwich.
Serve with some sides you enjoy!

Here it is!



As you can see it has a great red ring color from cooking and the smoke. The meat had a great smokey flavor and everyone enjoyed it. It may take a bit to prepare but it was worth it. Again this is a dish for those who may have smoked meats before, or even if you want to start its not a hard one. Check out our video below to see how Chef made this!

Veggie Roll Up's!

Hey Everyone,

    So the team knows we are so behind on posting meals but this meal we did a few weeks ago after our short break.  We took some time to get new equipment and just rest up a bit.  The life of a big YouTuber (423 Subs, lol) is very hard!  We honestly just wanted to rest and get new ideas.  The community was so nice and accepted us back with open arms!

     We came back with this great veggie roll up.  This very easy and fun appetizer will leave your guest wanting this site!  Please give us credit...  With nothing to heat up this meal can be made very quickly and refrigerated before the event!

Serves: 10-12

Prep Time:  15 Minutes
Cook Time: 0
Total Time: 15 Minutes

Ingredients:
2 Packages of soften Cream Cheese. (Chef says use 1.5) 1 Package of dry ranch Salad Dressing Mix 5 Chopped Green Onions 1/2 Can Chopped Green Drained Chilies. (Chef says use .5 can) 1 Chopped Celery Stalk. 3 Table Spoons of real Bacon Bits. 1/2 Cup Finley Shredded Sharp Cheddar Cheese. 10 Inch Tortillas (Your choice on flavor)  

Directions:
In a large bowl start with soften cream cheese
Add Dressing Mix and stir
Add Green Onions and mix
Add 1/2 can Chopped Green Drained Chilies and mix.
Add Chopped Celery and mix.
Add Bacon Bits and mix.
Add Cheddar Cheese and mix.
Place a tortilla down and place the now mixed ingredients in the tortilla.
Use a spoon or spatula to spread the mixture around till the tortilla is lightly covered.
Roll up the Tortilla tightly and cut the ends.
Make 1/4 to 1/2 in slices.
Place in the fridge for several minutes to harden then serve!


As you can see they look great!

Honey BBQ Chicken Tenderloins


Hey everyone!

     Grilling season is still underway and we wanted to show you a great healthy chicken dish!  Chicken Tenderloins are very delicious and healthy for you!  High in protein and low in fat these strips make a great meal in a matter of no time!  Most people won't think to grill the Tenderloin but try something new!  These are chicken finger size and shape so they are very easy to eat and will they ever be eaten!  We really think your family will enjoy this and it different from just your average chicken breast on the grill.

Prep Time: 15 Minutes
Cook Time: 15 Minutes
Total Time: 30 Minutes

Serves: 4

Ingredients:
1 Package of Trimmed Fresh Chicken Tenderloins
Pinch of AP Rub
1/4 Cup Olive Oil mixed with Seasonings (Store usually sells)
1 Cup BBQ Sauce
1/2 Cup Honey

Directions:
Take your chicken tenderloins out of the fridge and place on a plate, make sure they are thawed.
Season both sides with AP rub.  Salt, pepper, garlic powder.
Rub a little seasoned olive oil on both sides then let sit for about 10 Minutes.
Mix your BBQ sauce and honey together and place aside.
Get your gill nice and hot and use grill covers if you have them, they will protect your grill and chicken.
Heat only one side of the burners, leave one side off.
Place the strips down and shut the lid, let cook for about 5 minutes then flip.
After about 10 minutes total move them to the other side of the grill where the burners are off.
Coat each side with the BBQ and Honey mixture then place back down on the side of the burners not on.  Let sit another 5 minutes.
Take off ans serve up with any two sides you enjoy!

Looks great!


  As you can see they look amazing! A nice coat of BBQ and grill marks. The reason we cook our chicken then move them over to glaze in the BBQ Sauce is actually because the sauce will not crisp up like a shell and side off. If you glaze while cooking this will happen. Putting BBQ on cooked chicken will just add that flavor as it rest a bit on the not as hot side of the grill. Check out our video to see!
