Italian Frittatas | Happy Takesgiving!

Happy Takesgiving!

Here we celebrate takesgiving in honor of all the land that was "Found" by those Europeans, even thought others were living there.  We do have a fun dish that doesn't involve turkey either!

Looking for a very simple and fun breakfast!  Try out these Italian Frittatas.  Simple, and fun to make.  You get your very own little hand crafted mini breakfast.  With so many great ideas for breakfast we love this one because it is personal and just has a great taste and look to it.  We think you really will enjoy them.  These are also Gluten Free!

Serves: 2
Prep Time: 25 Minutes
Cook Time: 20 Minutes
Total Time: 45 Minutes


Ingredients: 1/4 Cup Chopped Onion 2 Tablespoon Olive Oil 4 Pieces of hard Salami cut in thin slices 2 Table Spoons Chopped Onion 4 Large Eggs 1 Table Spoon Milk 1 Tablespoon Parmesan Cheese 2 Tablespoons of chopped fresh Parsley 2 Tablespoons of chopped Green Onions Dash of Pepper 1/4 Cup Shredded Mozzarella Cheese

Directions:
In a small skillet cook up the onions in medium heat with some the olive oil.
Divide into two greased ramekins and top with Salami
In a small bowl, whisk eggs, milk, Parmesan cheese, parsley, minced chives and pepper.
Pour into the ramekins evenly and bake at 400 degrees for 10 minutes.
Sprinkle Mozzarella cheese and bake 8-10 minutes longer.
Sprinkle with a few chopped green onions.

They came out really delicious!
