Oven Baked Chicken Schnitzel

Hello all!
Well October Fest is over but we are cooking Schnitzel! Usually fried but we wanted to oven bake it. This dish is a great tasting and simple to make. It made a great dinner and everyone really enjoyed it! This is a popular German dish and you can use Pork and usually fried. However we wanted to change it up a bit! We like to cook all different dishes from healthy to comfort. However this was a really great tasting dish and reminded us a little of a Chicken Parm dish. Prep Time: 25 Minutes
Cook Time: 5 Minutes
Total Time: 30 Minutes

Serves: 2-4 (How many pieces you have)

Ingredients: Olive Oil 2 Chicken Breast Salt and Pepper 1 Cup Flour 1 Tablespoon Paprika 3 Eggs 2 Tablespoons Milk 2 Cups Seasoned Breadcrumbs Lemon Zest

Directions:
Butterfly each chicken breast
Use a meat tenderizer on it lightly
Add Salt and pepper to both sides
Prep oven to 425 degrees
Setup your dredging stations. Flour, Egg wash and breadcrumbs
Dredge the chicken through each station
On a oven save pan place some tin foil down
Then add some olive oil to it, then put the pan in the oven for a few minutes to heat the oil
Once the pan and oil are hot take them out carefully
Place the chicken on the pan and cook for 6 minutes
Flip and cook again for another 6 minutes
Remove and check the chicken by cutting or using a thermometer making sure it is cooked
Feel free to plate this up with a nice side of mashed potatoes and a healthy vegetable

The chicken came out great.  The meal is on the healthier side, even if you cook it in a little oil.  However this oven baked chicken was simple, tasted great and would make for an awesome dinner!  The team tries to cook in the oven as much as we can knowing it is a healthier solution to just frying everything.  Below is the video so be sure to check it out and see how we put this together!
