Doritos Chicken Pita Pockets

     We are excited to announce our first lunch meal.  This amazing meal is so easy to make and puts a fun spin on your typical sandwich.  With just a few ingredients and your oven you can surprise your family and friends with a cool unique lunch meal as you watch a game on TV or just hang out and talk.  This also will make a great conversation piece at the lunch table at school or work!  As everyone is eating their same old meals you will show them you have something different.

     We hope everyone is having a great Fall season and getting ready for Halloween!  With just a week and a half away what will we surprise you with!  I guess you will have to wait and see.  The Chef is keeping it a secret even from the team!  Below are all the instructions and ingredients as well as the video so be sure to keep reading and check out our other meals!

Serves 6-8

Ingredients: 
Chicken Tenderloins: 1 strip can be cut in half which will fill a pita.  (4 pieces of chicken per full pocket 2 pockets per plate)
2 Cups Flour
3 Eggs
2 Table Spoons Water
1 Bag of Doritos
1/2 Tomato-Chopped
1/2 Onion -Chopped
1 Shredded lettuce
1/2 Cup shredded Mozzarella and Sharp Cheese each.
1-2 Packages of Pita Pockets
Mayo, or any dressings you wish
Salt and Pepper

*Measurements are all depending how many you need to make

Directions:
Wash and dry the Chicken Tenderloin pieces
On a cutting board use a meat mallet to lighting pound the chicken to loosen them, makes them flatter and faster to cook.
Cut the chicken pieces in half, and again if needed.
Take out 3 pans to setup your assembly line.
1st dish is flour and some salt and pepper
2nd dish is eggs, water, salt and pepper.
3rd dish is crushed up Doritos.
Dredge a piece of chicken in the flour.
Then move it to the egg dish and coat it in egg.
Lightly place it in the Doritos mix, coat both sides.
Place on a new dish.
Repeat until all pieces of chicken are done.
Heat your oven to 400 degrees.
Place the chicken on a cooking sheet and place in your oven.
Cook for about 15-20 minutes or when chicken reaches 165 degrees internally.
Take your chicken out when done and start to make your pocket.
Dress with any dressings you wish then add your toppings and chicken pieces.
Once done serve both pockets with chips and enjoy!
